Increasing the fan speed is a good idea to prolong your PS3's life, but it won't improve FPS. A GPU overclock and/or internal SSD will though. That plugin size change is a placebo only, does nothing.

It's either a corrupted PKG, lack of license files (.rap, for the digital version but normally it's shows to buy the game when you don't have), you installed an encrypted version, to decrypt it use PS3 disc dumper (assuming it's an ISO file) or you didn't enable HEN. I know it's been a year but better late than never
Never set your fan to manual.. that's how you cook it. Changing the temperature within a reasonable bracket isn't going to affect fps at all, and no the best one is not "MAX" because it uses the most RAM. The best one is minimum.

Overclocking means surpassing manufacturer limits of a component so yes it will reduce lifespan but if you do a safe and stable OC you shouldn't have any problems at all, only a slight increase in temperature. General rule, if you can overclock without changing voltages it's basically free FPS

However the faster it spins the louder it gets, btw this so-called OC (memory plug in extension) is nothing but placebo effect as the memory that this guy "OC-ed" has very little to nothing to do with gaming, it is rather for listing stuff, for menu stuff and web listing, scanning drives etc etc, it doesn't improve anything so leaving it on standard/default is the best, OC-ing the RSX however can boost some frames and shows improvement especially in graphics demanding games, anywhere from 2-3fps up to 5-ish fps, could go from low-mid 20 fps to stable 30fps, look up PS3 RSX OC and find someone who knows what they are doing and follow their step by step guide and you may or may not achieve what you are looking for, however it is risky, especially when you find you that if you push the RSX OC too far it can brick your console, so be mindful of that.
Yes but it's a crap, the fan curve is very bad just to make the PS3 as quiet as possible, you may not even know but your ps3 may be running at 70s/80s maybe even 90s degrees if you never changed the thermal paste with the stock fan "sensor".

Over clocking the Video Ram always helps to increase the fps in games, specially on GTA V. GTA V runs like shit on the PS3, the worst way to play that game. The consoles do it dynamically without sacrificing the temperature but when you overclock it, you are doing manually instead of letting the console manage the Ram and the Video Ram automatically. The reason why the Nintendo Switch has terrible performance on latest releases like Pokémon Scarlet y Violet, Zelda, Bayoneta 3 etc. The reason why people like to overclock the Switch.
If you want to overclock your PS3 do it in a super slim unless you want to kill your fat or an early revision PS3 slim. The fat PS3 can barely handle PS3 games without cooking itself out. LMAO
