Hi Marizza Fouts! Thank you for your compliment and question. I do hope you make this cake. I purchase bulk buttercream from a local super store. Pre-mixed icing is available in a 30-35 pound pail. I do put it on a mixer to soften it and remove the air bubbles. For the roses and borders, I keep the buttercream icing a little stiff. However, for writing or inside border I like the icing very soft. Toni
