Late Night Quadruple Onion Smash Burger

I smashed a burger in my wok (to contain splatter).
It has 4x onions:
- thin sliced and smashed into the patty
- raw under the cheese (this is a good move)
- fried shallots on top
- fried shallot aioli on the buns
It also has pickles.
To make the fried shallot aioli, I make my basic garlic mayo recipe, but blend in a big handful of store-bought fried shallots at the start along with the eggs, then a big dash of fish sauce at the end. It's similar to the Fried Shallot Caesar Salad dressing recipe I wrote for the NYT recently.

Fine, relatively sober.. sober enough to strap up the camera and record and cook w/arguably the wrong pan b/c it was the only one easily at hand or b/c confidence. all things he's done 1000's of times sober. but, that was not a sober late night snack lmao.

I dunno. The mental rehearsal necessary to get the burger from the pan to the bun tells me he's proper gooned and his hands are just cooking on autopilot
Kenji’s videos satisfy everything I want in cooking content. The stark contrast between his lengthy videos, explaining every minute detail and scientific study, to the “late night” asmr munchies videos. Both styles great for very different reasons. He has inspired so much home cooking for myself as well as a willingness to adventure into new culture’s foods. Truly the king of food RUclips.

I think he chuckled because of something the dog did (as in appear whenever food is around which can be funny) and then straight afterwards, the dog appeared on camera and got a treat.

The chuckle over how insanely delicious something so quick and easy can be, whipped up right in you’re own kitchen is a phenomenal feeling.
Yeah. I learned that when drunk, food doesnt have to take hours. Grilled scrambled egg burritos are a snap and so much better than ungrilled.

Right! I think in another video he mentioned it's so the melted cheese keeps the onions in place on the burger :)
@@shadyshinichi2JZ Yes- so the steam released from the cooking onions melt the cheese, also why their patties have holes to allow steam to travel through and hit more cheese to melt

Being a dad as well, I always imagine Kenji’s kids walking in late at night and seeing dad with a Go Pro on his head cooking and being like “well, I’ll pee later” lmao

I love how he’s using his wok for a smash burger
Heavy smoke coming off that wok might set off smoke alarms. Anybody have any suggestions to keep the smoke down on indoor high heat searing? Cast iron has the same problem with heavy smoking.

@@DJ-nn6vg if it’s heavy smoking, it could simply be too hot. I just made some cast iron smash burgers last night, with minimal smoke! Also, if not already doing so, wait until right before you cook to add the oil to minimize the smoking.
@@DJ-nn6vg Have a vent hood that vents outside, sometimes even then having doors/windows open and/or a plastic bag rubberbanded around the smoke detector (or a shower cap can also work)

When I read quadruple burger, I originally thought it was going to be 4 patties rather than 4 types of onions. This looks amazing, I need to make it this weekend.

@@moses7313 Not sure. Kenji recommended The Wok Shop in his book. I'm incredibly happy with mine. It was only like $50 and really high quality.
@@moses7313 If it is the same one he has had for a long time, I believe he stated he got it at Target years and years ago.
@@moses7313 Don't hold me to it, but it might be like some kind of Joyce Chen wok from Target he got 20+ years ago. He definitely said it was from Target, but not exact on the brand. Point being.. there's no need to get some artisanal wok to make good food.
I always try to explain to people that you can make everything in a wok. Kenji is much better at explaining than me: show, don't tell. Thanks, Kenji
As long as you have a gas range. THis is much more difficult on electric.

More 4x ingredients please! I've always wondered about a 4x onion recipe with pickled red onions, caramelized onions, roasted onions, and onions blended into whatever. It's kinda like the Tasty series on how they used 10 pounds of ____ (garlic, mushrooms, potatoes, etc)
Both Kenji and Babish returned to their roots with a completely regular video like they used to make before. And I am ABSOLUTELY here for it. Late night series reason I joined the channel, and I'm loving it, it's so good.

Oh that little giggle of his around 3:26 was priceless. Drunk, stoned, or bone dry straight, the joy of a snack like that one eaten in the kitchen standing up over the cutting board is recognized and understood by all. Plus it’s inter generational! He certainly has earned that golden moment.

You know, I never once stopped to think that a mandolin would be perfect for getting onion slices.
Be careful, you might end up with finger slices if not.
I hate cleaning it. So, I always just use a knife even though it’s a bit slower.

I like a lot of the burger stuff and sandwich stuff you put out, especially burgers too, and it looks great. I also like that you film with a camera on your head, it's not something many people do, but it looks cool and puts us right in the kitchen and over the preparing of the food.

This is sort of the simplified version of Kenji’s own take on Oklahoma onion burgers that are, no lie, the #1 family request around here. An absolutely legendary, indescribably delicious burger. Only real difference is steaming the buns over the flipped burger and onions, and wow is that delicious!
Something about format that is so addictive. I dont even eat meat, yet here I am watching this totally enthralled.

Dude either has the best, quietest exhaust hood in the world, or some crazy good ventilation in his kitchen. Every smoke alarm in my house would be going off right now if I did this, even with my crummy hood running
I'm wondering if the gopro/editing can remove a whitenoise sound like that vent hood. I have a 300cfm one and it can be decently loud and not quite powerful enough to get the smoke out of the house for a smoking situation like in the video.

I never thought of using a wok for a smashburger, but it makes perfect sense lol
A griddle is usually just about as hot as a wok gets, so it should crisp the edges just as much and just... I know i get way more use out of my wok than I do that stove top griddle my parents bought me for my birthday a few years back.

As I've been able to work from home more in the last couple years, I've come to realize something: it's much easier to cook for myself than cooking for my whole family. It's not just adjusting for spice or flavors, but also that it takes a lot less time to make 1 burger vs. 8... I know that's simplistic, but I love cooking for my family or a crowd, but I have a lot more fun cooking for just me. Kenji's late night videos remind me of that fact.
