That's a good question, but the answer is variable. It depends on how much fat was in your meat before it was dried. Fat is the enemy to jerky. If it was fairly lean to begin with, and stored in an airtight container in the refrigerator, it should last one to two months. Thanks for visiting and continuing to support our channel!
I would not keep this for more than a week... If any fat goes even slightly rancid, bacteria will grow so fast that you will never need Botox again. Your face will be paralyzed (at worst.) They key is complete dehydration and efficient air circulation. A dehydrator is not expensive. Salts and acids help preserve meat too. To limit anything going wrong - dehydrator and then low heat smoke over charcoal. Would I eat this lady's jerky as is? Yes, I would... I don't care if I lose half my face. Too old to care.
Most likely scenario if you don't dehydrate the meat enough but are healthy: 1. You will have need for some urgent bodily evacuations. 2. You will poop like a sweaty rainbow soldier that doesn't have enough toilet paper. 3. You will be more than unpleasantly ill. Is it worth doing you own jerky!? Absolutely....
I have been making jerky this way for quite a while. No one has ever gotten ill from it. Yes, I make sure it is completely dry. Your point about salt is a good one. There is a large amount of salt in both Worcestershire and soy sauce.. This recipe has both in the marinade. If the meat used is fresh and very lean, stored air tight, and kept in the refrigerator It should be fine for 4-8 weeks.
@@cookingandstoring As I said, I would eat your jerky, no problem. However, "it should be fine" is a disconcerting statement. You do see this, right? Optimally, thing are OKAY or they are NOT. GUESSING, shouldn't be a variable.
