Ingredients:
Carpaccio for 3 plates
Option one:
Arugula 2 handfuls
For the sauce:
Mustard 0.5 tsp.
Lemon 1 tsp.
Olive oil 2 tbsp.
Balsamic vinegar 0.5 tsp.
Coarse salt
Salt and pepper for meat
Pine nuts 1 handful
Parmesan
Option two:
Thin mushrooms 100-150g.
Soy sauce 2 tbsp.
Sesame oil 1 tsp.
Arugula 2 handfuls
Coarse salt and pepper
Not much balsamic vinegar
Olive oil
Parmesan
Not a lot of pistachio nuts
Option three:
Eggplant 1/3 pcs.
Salt and pepper
Corn starch 1 tbsp.
Arugula 2 handfuls
Coarse salt and pepper
Walnut 2-3 pinches
Not much balsamic vinegar
Olive oil
Parmesan
