    When grilling any type of steak, you want to start with a quality cut of meat. For these ribeyes I stopped by my local butcher and picked up a couple 20oz Certified Black Angus Choice Ribeyes. Look for ribeyes that have plenty of marbling because fat equals flavor.
    About an hour before you plan to grill the steaks take them out of the refrigerator. Each steak gets seasoned on all sides with Salt, Black Pepper, and Granulated Garlic (I use my AP Seasoning).
    Let the steaks rest turning about every 15 minutes. This gives the seasoning time to pull a little moisture out of the steak allowing flavor to penetrate the meat. It also helps the steaks brown during cooking.
    While the ribeyes are resting make the Red Wine Mushroom sauce and keep it warm for serving.
    Red Wine Mushroom Sauce:
    - 16oz Sliced Mushroom (baby bella)
    - 2 Tablespoons Real Butter
    - ½ Red Onion diced
    - 3 cloves Garlic minced
    - ½ Cup Red Wine
    - ½ Cup Beef Broth
    - 1 Tablespoon Balsamic Vinegar
    - 1 Tablespoon Worcestershire Sauce
    - Killer Hogs AP Seasoning (to taste)
    Melt 1 Tablespoon of Butter in a sauté pan. Add red onion and cook for 2 minutes until onion starts to soften. Add the garlic and mushrooms and continue cooking for 2-3 minutes. Season with a pinch of AP rub and reduce for 1 minute.
    Pour in the balsamic vinegar and red wine and reduce for 3 minutes. Add the Worcestershire and Beef Broth and reduce by ½ about 4-5 minutes.
    Turn off the heat and add the remaining Tablespoon of butter to smooth out the sauce. Serve over your favorite cut of Steak.
    About 30 minutes before grilling start 1 chimney of coals. I use briquette charcoal and a weber grill for this cook but you can use any grill set up for high heat grilling. You want the grill temperature to be 500 degrees.
    After 20 minutes the coals should be really hot. Spread them out in the bottom of the grill and open the vents 100%. Place the cooking rack in the grill and give it another 10 minutes to heat up. I also use a set of grill grates on top of the Weber rack when grilling steaks. Grill Grates help distribute the heat and prevent flare ups.
    Just before the steaks go on the fire season each side with a coarse steak seasoning. I use my Steak Rub which is a combination of coarse sea salt, cracked black peppers, and herbs. You can use any steak seasoning you like here; Montreal Steak seasoning is a good substitute.
    As soon as the grill is up to temperature (500⁰) place each steak on the grate. Place the lid on and set a timer for 2 minutes. Give the steaks a 45⁰ twist after 2 minutes. Set the timer again and replace the lid.
    After 2 minutes it’s time to flip the ribeyes and repeat the process.
    Once 8 total minutes is up, you’ll have a perfectly grilled medium rare ribeye. Remove the steaks from the grill and allow them to rest for 5-7 minutes before serving.
    If you like your steak more done leave it on the grill for additional time. (2 additional minutes for medium and 4 for medium well. Anything longer is a waste of good meat!)
    Serve these ribeyes with the Red Wine/Mushroom sauce over the top. Ribeyes go great with a simple salad and baked potato but you can serve them with your favorite side dish.

    Great to see you back. I have made about half of your recipes now and everything has turned out amazing. All that I have is a weber with a slow and sear which I was initially unsure of but it has performed very well. My family and friends think that I am some kind of BBQ genius.     Malcolm - thank you! Great recipe and technique. I did two New York strips on the kettle tonight, and made the red wine/mushroom reduction. Some steamed asparagus, a baked potato, and a fresh garden salad and my wife and I were in heaven! Thanks again - I can't recommend this technique and recipe enough.

    When you tried that steak with the mushroom sauce I was half expecting a happy dance! I wouldn't have blamed you if you had. Great looking steak and accoutrement. I also want to say that one of the things I appreciate most about your videos is you pimp your seasonings but also provide other examples that may be more readily available.       I may have a preconceived opinion but don't trust any cooking vid from somebody that looks like they don't eat. Malcom reeds videos have taken me from zero to hero in my BBQ game. I used to ruin hundreds of dollars of meat. It was to the point my wife was going to take my BBQ privileges away. Now that I've found Mr. Reed I'm the bell of the ball

    I'm glad I watched this. Always had trouble with Ribeye because of fatty flare ups. Was thinking about trimming steaks b4 cooking, but now realize it's all about the grill grate. That thing is key for Rib Eye. Foq you flames for ruining my steaks!!! Thanks BBQ Right! Keep up the Good work!

    there are a bunch of videos on YT on how to grill a steak. alot of this and that, then at the end they all look a little funny...undercooked, overcooked, etc.
    but these steaks looked fantastic. my mouth watered instantly after you cut the center of that ribeye. first steak video that ever had that effect on me. and i consider my grilled steak the best I've tasted.

    No restaurant can cook steak better than me. "Period" Use a good butchers, salt and pepper, Clove of garlic cooked on charcoals religiously for the best cooked meat. Cook the meat at room temperature. You can't beat home cooking. Nice video Malcom. Loved it. Ribeye, Mans Food. :D

Keep it simple; salt and pepper it up, keep it out for about 45 minutes before grilling, get your coals blazing hot, around 500 should work, throw it on the grill after the grate is hot, rotate the steak a quarter turn about 2 minutes after you throw the steak on,flip it,wait 2 minutes rotate a quarter turn, wait 2 minutes pull the steak off and sit on a plate for 15 minutes and then cut a piece and dig in

      @@usernameisusername for an average thickness steak 6 minutes with a blazing hot fire should be just fine. If it's a huge thick ribeye you may need an extra 2 or 3 minutes

    I never ate red meat because I heard it was unhealthy for you. I started eating red meat and grilling steak a year ago, boy let me tell you , WOW, absolutely delicious. I grill my ribeye a similar way but with ONLY salt, then when I let it rest I put some butter on it with a tiny squeeze of fresh lemon. Oh baby watch out!!!!!

    Igo to a butcher who sells prime grade beef and he ages it if you request it. I buy a full rack of bone in prime rib aged. He then cuts it into 1 inch thick steaks and vacuum packs each one. When I don't grill them I cook them in my oven at 250 deg F for 55 minutes. They come out a perfect medium rare all the way through. I make up my own dry rub of kosher salt, garlic powder, and a small amount of thyme. When they are done I bast them with unsalted butter while they rest.
