Just made this. I decide to make it a day ahead, refrigerate overnight and serve it tomorrow, reheated with half and half and extra fruit. What a great dish! So easy to make. And, just an FYI, rather than place the fruit on top I mixed them (blueberries and strawberries) directly into the batter. Worked out just fine! Thanks for sharing this with us!

I also add 1 tbsp of peanut butter and 1 tbsp of apple cider vinegar (this one is to make soymilk thicker). Thank you so much for the brilliant recipe, now I don't feel too guilty whenever I crave something sweet and dessert-like!

Very delicious! Just tried making it today for the first time using pears instead of bananas and also oats combined with dried fruits and walnuts. Finally a healthy and delicious snack that's also quite easy to make.
Great base recipe! I followed it, but I replaced the egg with a chia "egg"; milk with almond milk; oat flour with almond flour (because I had it); blueberries with a diced apple; honey with stevia (I have problems with my triglycerides so I need to keep my dietary sugars down). I also added cinnamon and nutmeg. I just had one this morning. The chia "egg" doesn't hold the oats together as well as an egg would so I will use an egg the next time, but it was still delicious!!! I warmed it up in the microwave.
A flax egg made from 1tbs of ground flaxseeds and 3tbs water works better than chia at binding or holding things together ive found. Mix it with a fork and let it sit for 10mins to thicken : )
I tried this recipe, and my automatic whisk threw half the ingredients around the room and onto my face...thought I'll go ahead and put it in the oven. Turned out pretty good anyway! To be honest I had to film this recipe two times, right after baking this pan slipped off my hand and fell on the oven door, sometimes so easy to make turn into so easy to mess up. Glad you enjoyed the oats!

Wonderful, thank you so much. I use the same flavorings when I make steel-cut oatmeal in my pressure cooker (mashed banana, cinnamon, salt, milk, frozen blueberries, occasionally flax or chia). This recipe will work very well for the rolled oats I have on hand. Hadn't thought to add vanilla to it too!
I've made it with blueberries, used this awesome high protein milk with like 8.8g of protein per 100g, and added 31g (one scoop) of PEScience vanilla gourmet casein/whey powder. It's so damn delicious, a nice break from my regular overnight oats. Thank you Sasha, your recipes are an absolute bomb.

I've made it multiple times in different versions, but nah you don't really need to add more liquid with just one scoop, even though Pescience powder is mostly casein so it absorbs a lot. With regular whey you'll be fine. Just be sure to let the combined mixture sit for like 10-15min before you bake

I used applesauce instead of banana, which I like better, I used ground almonds insted of oat flour because it was what I had, and added a couple of tablespoons of peanut butter to the mix. I baked it longer to dry it out more and served it with yogurt. Absolutely delicious. I would eat this for dessert as well.
I made this last night and obviously had to add a few extras, chia seeds, mixed nuts, stem ginger. Just finished eating a slice for breakfast, its delicious. Many thanks for sharing the recipe. Stay safe and health :-))

@@HowToCookSmarter Here is an update. I made this recipe the day before we left on our first trip after quarantine. We only had frozen blueberries, so I put apple chunks and walnuts on top. It came out great, and I actually packed it up for a snack on our trip, so we sat in the airport eating baked oatmeal, better than anything you can buy there. I put the rest in plastic wrap and foil and took it in our checked suitcase. It traveled well and we enjoyed it for breakfast the next morning with Greek yogurt. Another winner, Sasha!

I made some last year when I'd got a pack of almost squishy plums cheaply: they made an excellent energy snack on long rides! They're firm enough to survive a few hours in my rucksack...
This is great, it's not quite as firm as an an oatmeal bar so baking this would provide a welcome variation. Great snack for the kids after school, too! And because I am Father Flax, I tip my hat to you for mentioning flax. 😊

Inspired by your technique, I developed a baked oatmeal recipe couple of weeks ago. I add chia seeds as egg replacer. Also add 1/2 cup of cacao powder ..My son who used to give me death stares when I made the "gloopy" version loves it in the baked form🤔😆. Thank you for the inspiration, Sasha!!

Was godlike without the added syrup and just bananas! Even made it without milk just water before, still fantastic, forgot to add baking soda too once, still fantastic lol thumbs up to you!
I've had a lot of baked oatmeal recipes sent across recently but I really struggle with keeping it from sticking to the baking pan and getting the consistency right. Now I prefer to use the microwave. It still rises a bit with baking powder and has more of a cake texture than just regular oatmeal and as it only takes a minute or two to make I can change the flavour every day to keep it interesting.
I'm making these tomorrow!! But I'm going to use almond flour because thats what I have on hand, hopefully it works the same. Thank you! Edit: so I did make these today like I said I would but I completely forgot to add oat flour or ground oats and I mixed in cranberries and they are still delicious!!

Hi! Your baked oatmeal looks crisp and delicious! Also, Can you please try this recipe I make? It is very delicious as well! 1/2 cup +2 spoons oat flour 1/2 cup almond flour 100 grams runny tahini (can also use cashew or any other nut butter) 1/4 cup of honey 2 tbsp coconut oil 1tsp vanilla essence Pinch of salt. Mix all these ingredients and put the mixture onto a parchment sheet. (in a baking pan) Melt 4 spoons of chocolate chips (I use dark) and cover it onto the dough! Freeze for 30-40 minutes and cut them in squares! Enjoy!!!!!
Just looking at that list of ingredients it sounds good enough that I would probably just eat the batter. I will definitely try it alongside the recipe in the video.
Looking for a similar recipe that Malto Meal had on their box. This might be it, but without flour. IT was so good. But I still like regular oatmeal sometimes, if I don't want to bake! All best with honey on top!

Just made this with raspberries and dark choc chips on top. Had to substitute homemade apple puree for the banana because I was a twit and forgot to get bananas lol. It’s amazing 😍
With some cacao it will be so good especially with peanut butter on top. You can also use some protein powder to make it any flavor you desire and increase the protein in the end product.
Another awesome recipe. I have tried other baked oatmeal recipes before. I'm not sure if it's just me, but mine turned out kinda firm, kinda soft/mushy. I can wait to make this. Thank you!!
Thanks Christine! I failed with this recipe at first, it was too soft, kinda mushy, and it was with 2 cups of milk, than I reduced to 1.5 cups and the texture was significantly improved, loved it, hope you'll do too.
I just made this, but I changed it up a little. I didn't have bananas or maple syrup and decided to try regular flour instead of oatmeal flour, and I think it turned out really yummy. Instead of the banana I used 1/2 cup vegetable oil, instead of the maple syrup I used 1/4 cup sugar, and instead of the oatmeal flour I used 3 tablespoons of all-purpose flour. I baked it for 45 minutes and it had a great chewy moist consistency. Thanks for the great recipe!

It's a really good recipe, I doubled the blueberries (put some on the bottom of the pan) and added half a cup of chopped walnuts.

Inspired by your technique, I developed a baked oatmeal recipe couple of weeks ago. I add chia seeds as egg replacer. Also add 1/2 cup of cacao powder ..My son who used to give me death stares when I made the "gloopy" version loves it in the baked form🤔😆.

I've had a lot of baked oatmeal recipes sent across recently but I really struggle with keeping it from sticking to the baking pan and getting the consistency right. Now I prefer to use the microwave. It still rises a bit with baking powder and has more of a cake texture than just regular oatmeal and as it only takes a minute or two to make I can change the flavour every day to keep it interesting.
Exactly, you can enjoy baked oats in so many different flavor variations, love this whole idea of mixing and baking oats this way.
I'm making these tomorrow!! But I'm going to use almond flour because thats what I have on hand, hopefully it works the same. Thank you!
Edit: so I did make these today like I said I would but I completely forgot to add oat flour or ground oats and I mixed in cranberries and they are still delicious!!

This is great for breakfast on the go. Its also nice cold so you can wrap it in foil and put it in the kids lunch boxes. Its delicious.

Hi! Your baked oatmeal looks crisp and delicious! Also, Can you please try this recipe I make?
It is very delicious as well!
1/2 cup +2 spoons oat flour
1/2 cup almond flour
100 grams runny tahini (can also use cashew or any other nut butter)
1/4 cup of honey
2 tbsp coconut oil
1tsp vanilla essence
Pinch of salt.
Mix all these ingredients and put the mixture onto a parchment sheet. (in a baking pan)
Melt 4 spoons of chocolate chips (I use dark) and cover it onto the dough!
Freeze for 30-40 minutes and cut them in squares!
Enjoy!!!!!
Just looking at that list of ingredients it sounds good enough that I would probably just eat the batter. I will definitely try it alongside the recipe in the video.

Looking for a similar recipe that Malto Meal had on their box. This might be it, but without flour. IT was so good. But I still like regular oatmeal sometimes, if I don't want to bake! All best with honey on top!

Just made this with raspberries and dark choc chips on top. Had to substitute homemade apple puree for the banana because I was a twit and forgot to get bananas lol.

With some cacao it will be so good especially with peanut butter on top. You can also use some protein powder to make it any flavor you desire and increase the protein in the end product.

Thanks Christine! I failed with this recipe at first, it was too soft, kinda mushy, and it was with 2 cups of milk, than I reduced to 1.5 cups and the texture was significantly improved, loved it, hope you'll do too.

I just made this, but I changed it up a little. I didn't have bananas or maple syrup and decided to try regular flour instead of oatmeal flour, and I think it turned out really yummy. Instead of the banana I used 1/2 cup vegetable oil, instead of the maple syrup I used 1/4 cup sugar, and instead of the oatmeal flour I used 3 tablespoons of all-purpose flour. I baked it for 45 minutes and it had a great chewy moist consistency. Thanks for the great recipe!
