Many food packages, such as rice, provide multiple servings. If that package had been budgeted over several days, then they wouldn't have exceeded their budget by purchasing it.
As others have said here, salmon is not the cheapest fish, so why did he pick that one? I can't imagine a chef not understanding such a basic concept. That was sufficient in itself to cause the budget overrun. Did they want to exceed the budget?
Legumes, etc cost far less than meat and provide sufficient protein. It is a misconception that you can't get enough protein from a meat free diet.
The show has a nice premise, but I think there was a slip between what it could have been and what they did.

my mums a pensioner and lives on her own and her only income is a pension. She always has food in stock and never ever goes without a meal, if she ever had trouble in that respect she would eat at mine everyday.
Does the elderly man not have any family he could ask for help? Id never see my mum eating half a can of soup and going to bed hungry it would break my heart.
I felt sorry for this guy and couldn't help but wonder why his family aren't helping him (if he does have a family).
Also, most people on pension are entitled to pension credits and if they get those then sometimes most of the rent and council tax is covered which would leave them with more money to have. Maybe he's not entitled to them but the vast majority of pensioners are.
Maybe these people have other outgoings such as loan repayments which have eaten into their finances so much they have to shave money off their food budget. I've been there done that but i learnt its possible to eat well on a budget, tinned and frozen fruit and veg is just as good for you and keeps longer resulting in less wastage.
The chef was turning his nose up at beans on toast for lunch but its what most people have for lunch as its quick, easy, filling and cheap.

Why is it never people like this who won the euromillions?!?
It’s only ever people who are already comfortable.
Il never forget reading about the couple who owned a boat and already had their dream home, and their reply was ‘it’s the icing on the cake, I think we’ll buy a new carpet’ 😡😡😡🤬🤬🤬

Here in the U.S. I have gone to foodbanks. The first time I went out of town too embarrassed to run into anyone I might know as it was I cried at the sign up desk. It is hard for people.
If, folks can get a few things ahead such as a bag of rice, dry beans or even freeze half a can of beans, half a can of vegetables they will be a little ahead. Food insecurity is real, frightening and I more homes than we know.

There's no reason for them to skip meals. Yes the price has shot up but I can still get a bag of spuds for £1.25 rather than a quid a few years ago and there's 5 meals in that, not the most varied diet but filling, just eat the skin for the vitamins. Box of cheap cereal for under £1 lasts at least a week and all but the pensioner has a garden they aren't using to grow from.
Those aren't even my cheap options. I'm 18 months unemployed, not a snob with full cupboards just having a go.

I want a show where they take the price of all the processed food purchased [ including junk food ] then with the same amount they purchase ingredients to make home-cooked meals. Then see how much money is saved.
Also, I want a show where the money spent on cigarettes, lottery tickets, drugs, alcohol, energy drinks, sodas and junk food is added up then the same amount used to purchase groceries or pay bills. Folks would, I think be shocked at how much money they waste.

There is something else going on with the mom Joanna than just missing meals. Oatmeal is very inexpensive and healthy and filling. She could feed her and her daughter a healthy breakfast. She has money for all the sugar she puts in her tea multiple times a day. Something else is going on then can't afford food. After talking to the dietitian Joanna said it's going to be hard. I think she has an eating disorder of some type. When she's crying and the chef says "it's just food"
