    Made this today with beef + pork instead of veal (can't find it where I live) and I got to say it was amazing. I've tried couple other recipes before and while they were more complicated, the end result wasn't as good as this. Hats off to you Chef John. This is the one recipe I know I'm going to repeat several more times for the years to come.

      +Biggolf BG ,yeah veal is hard to find,plus the price is very high.a friend used ground turkey,she took some thigh meat and put it thru the food processor.

      s thompson Yeah, I imagine that should work fine as long as the meat mixture have enough fat in it. Turkey is very lean by itself. Probably too lean for this kind of meatballs. Did your friend mix the turkey with other kinds of meat at all?

      I would never eat veal. Those poor baby cows or "calves"
      I feel like they should at least get a chance to hang out with other cows in the feed lot cage before slaughter

      @@jonjohnson2844 A broiler is a separate part of the oven that has an exposed flame. It’s like cooking food on a grill, but upside down and inside the house. It browns food more quickly than baking.

    Normal meatballs have minced and sauteed onion and garlic, as well as fresh chopped herbs, so this step is also much faster. Come on.

    BTW a small sorbet scoop is also a great shortcut for biscuit dough, rather than rolling it, cutting it, and re-rolling the excess. Nothing goes to waste. This is especially good for making cheddar biscuits, Red Lobster style.

    made these today, what a great way to make meatballs!! and he's right, even though you work the slurry in really well, the meatballs are VERY tender. I will neve make them any other way! (love the easy cleanup for the meatballs too)

    Just made these, with some alterations to the slurry. Instead of bread crumbs I added matzo meal, added fresh herbs instead of dry and added no milk... still came out awesome. The scooping kept things neat and clean, loved that^^ Thanks!

    Thanks to you, I made this dish for the first time and it came out phenomenal Chef John !! So this is where I thank u soo much for posting this video. I can cook a lot of other meals, but spaghetti and meatballs was never one of those dishes prior. NOW I know how to make it PERFECTLY !! I don't eat pork and I made it with just beef, but next time I'll try half beef, half veal. This dish came out superb !!

    When making meatballs for sub's I love using a scoop. The flatter bottom is perfect when you're putting them inside rolls. I wouldn't do it for spaghetti and meatballs but for subs it's great. No fall out lol :o)

      I disagree. When he goes in with the fork (or whatever utensil is relevant) at the end, I personally am satisfied with that. He shows the inside textures, and you get a feel for how he is eating it (and he can keep the voiceover audio). It's like a first person view of eating the food. I think it's more enjoyable this way where we don't see his face (no offense, Chef!). His thumbnail pic is enough to satisfy curiousity about what he looks like, but I think these videos are great this way, where we are only focused on the food. Quite different from most RUclips cooking vids. His voice is great. Maybe one special video where we see him actually eating as a treat for fans like you, but I much prefer not seeing his face.

    Just a fun fact: without detracting from the fact that this looks delicious, I have never seen spaghetti with meatballs back home in Italy. Never. It might be a regional thing, but if so it's very regional, because I have been around, and it's certainly not wel known. Anyway, will make this!

    What I really like about this recipe is that you can't make them tough by over-mixing. Love that. Got to get a little scoop and try these. I love pasta but I'm always too lazy to hand roll the meat balls. Scooping just might be the trick for me.

    I know that what I am about to say defeats the purpose of fast, but if you refrigerate the meat mixture for 4 hours (or better, overnight) then you won't get as much of the juices running out when you broil--they will stay in the meatball.

    We just made these substituting ground lamb for veal, then added a bit o' Rosemary. Baked them at 400*F for about 25 mins on a cookie rack, then added them to some homemade sauce. Worlds greatest and fastest meatballs. Thank you Chef John!

    Hi Chef John! Watched many of your vids on food stuff, they are awesome. Yesterday I planned making spaghetti and meatballs for folks. The local butcher was helpful on meat blends, 1/2 pound of grass fed ground chuck, 1/4 pound of ground veal and pork. He also gave suggestions on what to put into them and how to make them. Very similar to your video. Thank you so much for your videos and printable info/ingredients and directions. I tried your broiling slurry method last night, few tweaks (added garlic and onion powder and dried oregano and your suggestion of italian herbs. I realize oregano is in it, but added a bit more). 6 inches from the top and a bit longer than 5 or so minutes each side for broiling, excellent. BUT, I love your scooper idea, borrowed neighbor's and the; meatballs, sauce, spaghetti all came out great!!! I added cheesy/herb/garlic baked and broiled bread and salad to it. Me and my folks LOVED it. Thanks for the tips!

    you don't even have to do meatballs in the oven...just drop them into the sauce and cook them there...saves on mess. I use leaner meat for the hamburger. if you want moist meatballs add some ricotta to the mix.

      you can use almost any cheese you like. grated or not... I tried American cheese in the middle of the meatballs. Still delicious

    I personally don't brown my meat balls in the oven or top stove. what I do is just drop them into the tomato sauce raw. start by making up your tomato sauce and then by the time you've got your meat balls ready drop them into the sauce and they should be done in about 45 mins. check them with a good instant read thermometer or pull one out and cut into the meat ball and see if it's cooked. I've been doing this for 20 years and learned this from a italian cleaning lady who knew more about cooking then cleaning.

      Kabbey lassiter It's not an umbilical cord.(The chalazae (plural) are rope-like structures made of protein that act as a support system for the yolk. It keeps the yolk suspended in the center of the egg and safe from pressing against the shell or settling on one side of the egg.)

    I know its wrong, but in my Italian household we call the sauce gravy, which we typical have on Sunday's hence our staple phase for our Sunday dinner is"Sunday Gravy" along with our fried meatballs, pork bones, braciole, and pig skins. Which all simmer in the Gravy prior to serving. We have good ole Italian meal.. delish! :)

    Thanks for the quickie tips. I tried it using 50/50 beef/pork and I ground up a teaspoon of fennel seeds in my handy dandy mortar and pestle, I always loved the taste of garlic and fennel seeds in spaghetti sauce and this worked well. Oh, I know that you love dried chilli flakes, can you recommend your top 3 please? I grow various types of hot chilles and dry some to grind, but I also buy store bought too and was wondering what kind you like.

    aww chef john, i just made meat balls tonight and spent a really long time rolling them and browning them in a pan... wish this vid came out just a few hrs earlier... did i mention you're my favorite! :)

    and because I knew I was just cooking it with ground beef, i tried to purchase a package of beef that was only 80% lean. Most of them are way too lean. I don't like my meatballs or any type of meat too lean. But Thank God for RUclips. You're a god sent !!
