He's measuring the exact hight of the saddle before the cut and just has to look at his notes what height the rider needs and cut of the difference. The different ISP holder @musicIVI mentioned are more oriented to the aftermarket customers to give them a wider range or when you want to sell a used bikes.

It's the most important part of the build since all the angles and especially the saddle has to be in the perfect position for the rider to compete in races like the tour de France. Every pro tour team uses such a system, in our sunweb Cervelo pro build its the same, the Maclaren Bahrain Team has a slightly different one.
I've always done it that way. Part of it is habit from the days of Cinelli 1A / XA and 1R stems. When the newer/current style of bar and stems came out I just loosely put on the front plate and inserted the bar. Just seems quicker and easier.
I know its trendy to completely blur every single shot in these videos, but it's okay to use f/2.8 or above and have a bit more of the shot in focus :)

On the Giant there is around 50g of black paint, the Trek (white with rainbow stripes) probably has around 150-200g of paint 😳 project one bikes shure looks awesome , but it's certainly not for weight weenies

Good job apart from handlebars tape on in wrong direction,,,always start winding away from the bike otherwise when holding bars your constantly trying to undo it

Yes, you caught us there 😅 very well observed, it was one chain link too short. We desided to use the time while he installed a new one for a quick toilet break and a battery swap and hoped nobody would notice 😬 later on the length is correct.
interesting that when he puts in the brake fluid he doesn't use the bleed block but rather the pad spacer. Great video edit: also ultegra rotors with a dura-ace build
Is there a reason why people don't keep the dust out of the bike when cutting seatposts/forks??? I'd flip the bike upside down to keep all this composite particles out...
This is a dropout-style workstand. Clamp-style workstands are fine, seatposts are meant to be subjected to clamping forces, but not if your bike is like a Trek Madone's.
giant manufactures for trek scott colnago and other brands maybe they dont have much hype like other brands but are the bigger and more professional big scale bike factory on the world if this bike had a sworks print on it you wouldnt say that for sure and its just marketing

That's brake cleaner in case there is any minineral oil or grease on the bars.
