Basque Burnt Cheesecake

  • This cheesecake has origins in the Basque region of Spain, particularly in La Viña, a café in the resort town of San Sebastian. There are many versions of this cheesecake. Some prefer to have a gooey center while some prefer the firmer center when the cheesecake is served. This cheesecake is baked at a high temperature to produce that beautiful dark brown top due to caramelization. This cheesecake is not smooth and dense unlike the typical American cheesecake. It has a gooey center also due to the baking temperature. Enjoy this specialty of Basque!

    Hi Chef, i just made one and my family loves it ❤
    i have a question: if I am going to bake more than 1 pan, will I adjust the temperature or the time? if yes for how long? thank you 😊

      If you double the recipe and use 2 baking pans, you use the same temperature and time. However if you double recipe and use only one baking pan, you need to bake longer but at the same temperature.

    Hi Chef! Thank you for this recipe. I tried it but the cheesecake turned out watery and there is water leaking at the bottom of the pan. what could be the reason po kaya? Thank you!

      Did you bake it bain marie style ? - which you should not Just wondering because I have never experienced this. Aside from the cheesecake being underbaked, I do not see any reason why it would be watery. Please take note that the baking time given is only approximate because it varies from one oven to the other. Ovens are not created equal. Can you try again?

    Chef pwde stevia ang gamiton? Pila ka cups?

      I do not recommend using stevia because stevia is 200 - 300 times sweeter than sugar so your mixture will lack bulk. It will also be dense and dry. I prefer to use erythritol because it is 70% less sweet than sugar. You can add a bit more sugar to increase sweetness. Taste wise, it will taste like sugar and it has 0 calories. For me, that is best for baking.

    Hello Chef!Sobrang sarap po yun lang di po nag burnt masyado kasi yung ginamit ko po na baking pan yung aluminum parang di niya maburnt yung sides at bottom.Ok lang po kasi masarap naman.Salamat
