Tofu Bolognese [VEGAN] | The Buddhist Chef

  • Tofu Bolognese
    ingredients:
    1- 16 oz (450g) block of firm tofu
    3 tablespoons olive oil
    1 large onion, finely chopped
    3 celery stalks, diced
    2 carrots peeled and diced
    1 teaspoon of salt
    1/4 cup soy sauce
    1/4 cup brown sugar, cane sugar or maple syrup
    3 cloves garlic, finely chopped
    2 tablespoons dried basil
    2 tablespoons dried oregano
    1/2 teaspoon crushed red pepper flakes
    3 cans 28 oz (800 ml) diced Italian tomatoes
    salt and pepper
    Grind the tofu in a food processor or with a fork. Set aside.
    In a large saucepan, heat olive oil. Add onion, celery, carrots and salt. Cook over medium-high heat until vegetables begin to soften (about 15 minutes). Add oil if needed.
    Add the tofu, soy sauce, brown sugar, minced garlic, basil, oregano, crushed red peppers and tomatoes. Bring to a boil and simmer gently, stirring and scraping the bottom of the pan regularly, for 45 minutes.
    Uncover and continue cooking 30 minutes or until it thickens. Add salt and pepper to taste.
    Serve over the pasta of your choice.

    Is there a good replacement for the brown sugar in this dish? I really dislike added sugar, but this looks fantastic.

      Did you try using maple syrup, I try to avoid adding sugar to recipes so I might not adding sugar at all

      You could also replace the Chinese soy sauce with Indonesian kecap manis.

      just don't add any sugar at all, no replacement needed - especially if your taste budds have re-adjusted to not being overloaded with extra sugar.
      I never add sugar to stuff and it tastes great imo

    Hey! Could you do an updated version of this recipe using tvp or impossible/beyond plant based minced meats? Or would it be the same recipe but just replacing the tofu with the soy/plant based mince meat?

    Is it 800g of canned tomatoes in total or it's really 3 cans, 800g each? I think that's way too much. When I use three 400g cans it still makes 6-7 servings...

    can capsicum be substituted for the celery and can store bought tomato puree be used instead of the can tomatoes?

      gabrielle raul is capsicum another word for chili peppers? if so, I would either omit it entirely or use another vegetable with a mild flavor and is firm enough to bite into. you could probably use any edible stem or root that's mold in flavor.

      gabrielle raul and i always make my marinara from scratch and use fresh tomatoes. you can use any kind of tomato, prepared in any way, because it will all break down on the stovetop as long as you simmer it low and slow.

      gabrielle raul just know that if you use the tomato puree, you might have to send it out a little bit with water or wine or stock. Whatever you have that's at hand.
