En mi país le llamamos maíz pujagua. Nunca había visto que se pudiera hacer pinol o pinolillo cómo le conocemos , con el pujagua. Lo hacemos con el blanco pero le agregamos cacao . Y lo consumimos con agua o leche frío o caliente y agregamos vainilla . Gracias por compartir tus conocimientos .

Nixtamalization is the process by which the corn is cooked with water and quicklime, to obtain the nixtamal that,1 after grinding gives rise to the nixtamal mass used to make tortillas, tamales, etc. But this is not the case because maize can be used fresh or dried for later use; also, maize is the basic element in the preparation of pozole in various regions of Mexico and Central America, especially the variety cacahuazintle; it is also used in the preparation of many different foods such as in this case to make atole. Greetings
Of course maize of different varieties can be consumend/used fresh or dried. As far as my research goes the nixtamalization process helps removing the hull and activates/releases the niacin, which enhances the Overall nutrition value - back then this was advantageuous to the indigene people as they would mainly consume maize and it is known that the maize was braught to the "old world" but they did not pass on the nixtamalization process to Europe, which in some cases caused the Pellagra disease (people mainly consuming maize would lack the B3). As far as I know also pozole is made of maize gone through the nixtamalization process. So my question is whether for maize in General this is the optimal process, such as it is optimal with wheat to eat it e.g. as a sourdough bread?

Por ese motivo, personalmente procuro no hervirlo para que no se pierda ninguno de los beneficios que aporta, en especial las vitaminas y las proteínas que se descomponen a temperaturas elevadas.

Yo lo ago en un molino de mano y tuesto el maíz la canela y se le agrega un poco de azúcar y se incorpora todo y me quedo muy muy rico rico y sabroso

What about the niacin (B3). Shouldn't it go through some nixtamilization process (with wood ash or some acid as lemon/vinegar)?
