Interesting about the mites in that hard cheese! I recently learned that most commercially grown figs are pollinated by female wasps and the figs may have a decomposed wasp converted into a protein.

Emily, my future compatriot, you can eat all rinds (except if it's wax), and if it's too hard, like Comté or Gruyère, you can grill them, it's delicious !

i know it is too late but for the next times, when you eat cheese, make sure you eat them from the mildest to the sharpest
