    After this process, keep them in cool area. In Hong Kong some shops will ask u if u like to buy 10/20/30/40/50/60 years stock. Just 1pc of 50years stock (the color is black but don't worry) costs up to HKD300 Very useful for bad sore throat problem, mesh the lime with some hot water. Drink it warm & u'll feel much better the next day.

      This pickled lime, is salt and sour flavours. that is perfect for soup.
      mostly, we used with chicken meat to make "Chicken Pickled Lime Soup ". Ingredients:
      600 g, Chicken
      1 or 2,​ pickled lime (cut into half)
      4 cloves, Garlic (mined)
      4 leaves, Green Onion (rings)
      1 L, Water
      2 tsp, Sugar
      Method:
      1. Trim off the chicken into medium sized pieces.
      2. In the pot, add garlic and fry until fragrant then add the chicken.
      3. Pour the water, pickled lime, sugar and cook until the chicken is completely cooked.
      4. Finally, sprinkle the green onion.
      5. Serve with steamed rice.

      I think you do. The heat from the direct sunlight is important. We always had gallon jars on the foot of the house.

    The lime is dry. Where did the water come from?

      It's the juices the salt pulled from the limes. No water needed.
