    • @SpicyDeliciousGoodness
      @SpicyDeliciousGoodness  2 года назад

      Thanks for watching and I am glad that you gave it a try. I cook it most of the time uncovered and sometimes covered when I add the fish so that the fish can be cooked through. I guess many people cook it uncovered because they want to cook it down. The steam evaporates when it is uncovered but if you cover it, the steam builds up in the pot and add more water to the soup and it would take a longer time to cook down. So covering the pot works against cooking it down on time.

    Are you going to leave the stick inside the soup until it got finished?

    • @SpicyDeliciousGoodness
      @SpicyDeliciousGoodness  Год назад

      Yes because all the flavor from the stick will not be extracted in just one cooking. As you warm the soup, more flavor will get into the soup. On the other hand, you can remove it from the soup especially when the stick is big, rinse it and let it dry then use it for another banga soup.

      Yes you can but I don't think it would taste like the authentic deltan banga soup. The spices you don't have are the main spices needed for the soup. In fact you can cook your banga soup with only ataiko and roguje and it will have that signature taste. I don't know what it would taste like without those spices. But give it a try and let me know. Please help me o,my Banga soup always comes watery till the third day......what am I not doing right?

    • @SpicyDeliciousGoodness
      @SpicyDeliciousGoodness  Год назад +1

      Try to use less water when extracting the banga juice. And if you used a lot of water, cook it down before add all the other ingredients and do not cover the soup while cooking it. Covering the soup will only add more water to the soup due to water built up from vapor turning into water. The vapor evaporates when the soup is uncovered and the soup will cook down nicely in no time. The reason why it is not watery on the third day is because you have warmed it several times. So in a nutshell, use less water, cook it down and leave it uncovered. Thanks for watching.

      This is the second time that I am getting a comment about covering the pot. I don't think there is any rule about covering or not covering the pot. I sometimes cover the soup when I am cooking it with raw meat or fish so that it cooks through, but most of the time l cook it uncovered. The only thing I have noticed about cooking it covered is that it takes longer to cook down because the steam does not evaporate as it would if it was uncovered. So I cook the soup uncovered so the it would thicken up faster.
