  • Dhansak is a popular Indian dish, especially popular among the Parsi Zoroastrian community. It combines elements of Persian and Gujarati cuisine

    Ingredients:
    Ingredient Measure Units
    For Dry masala :
    Red Chili 3 Number
    Peppercorns 1/2 tsp.
    star anise 1 Number
    Green cardamom 3 Number
    Cloves 3 Number
    cumin seeds 1/2 tsp.
    Kasuri methi 1/2 tsp
    For wet masala :
    Red chilies 10 Number
    Coriander seeds 1 tsp.
    peppercorns 1/2 tsp.
    Cinnamon stick 1 inch piece
    Star anise 2 Number
    Green cardamom 4 Number
    Cumin seeds 1/2 tsp.
    Cloves 3 Number
    Fenugreek seeds Pinch
    Green chilies 6 Number
    Coriander (chopped) 1 Bunch
    Dill leaves 1/2 Bunch
    oil 3 tbsp.
    Chana dal 3 tbsp.
    Tovar dal 3 tbsp.
    Masoor dal 3 tbsp.
    Moong dal 3 tbsp.
    Pumpkin 100 g.
    Eggplant 75 g.
    Potato 2 Number
    Tomato 3 Number
    Turmeric powder 1/4 tsp.
    Salt to taste
    Chopped onions 1/2 Cup
    Bay leaves 2 Number
    Ginger garlic Paste 1 tsp.
    Mutton 500 g.
    Tamarind juice 1/4 cup
    Jaggery 1 tbsp
    Ghee 1 tbsp
    Directions -- Method:
    1. Heat a pan add Red chilli, peppercorns, star anise, green cardamom, cloves, shahi jeera, dry roast along with kasuri methi, make them into dry powder and keep it aside.
    2. For wet masala : Take another pan add coriander seeds, peppercorns, cinnamon stick, star anise, green cardamom, cumin seeds, cloves, red chilli, fenugreek seeds, dry roast it and switch off the flame and add green chillies, chopped coriander, dill leaves, put these into the mixy and add some water and make a Paste.
    3. Heat oil in a pressure cooker and add chana dal, tuvar dal, moong dal, masoor dal, roast all dals and add pieces of pumpkin, eggplant, potato, tomato and add some water, turmeric powder, salt and put the lid on and cook it for 4 whistles.
    4. Heat oil in another pressure cooker add bay leaves, chopped onions, salt, cook the onions are change the color and add ginger garlic Paste, mutton pieces add some water put the lid on and cook it for 3 to 4 whistles.
    5. Heat a pan and add the cooked dals and mutton and also wet masala Paste, add the water and adjust the consistency.
    6. Add tamarind juice, jaggery and ghee mix it well and cook it for some time.
    7. Serve it with brown rice.

    I have made this recipe a few times. It just can’t go wrong! Hands down the best Dhansak recipe there is out there. It has quite a few ingredients and does take a decent amount of time to make … but the result is Wah! Gracias Vahchef! You’re the best!     hello Chef.. I tired your recipe today and it turned out mind blowing, Thank you so much for this simple recipe. I have had 2 failures of similar recipes in the past and i was really nervous.
    Suggestion: i added the wet masala to hot oil and cooked for about a min to enhance the flavors!!

    this is ofcourse my favorite recipe, but chef can you show some of ur cooking on an induction stove. For us lesser mortals living alone, we dont have the luxury of a stove when away from home.

      I always just order Dhansak sauce when I go out to eat this...meat not at all required to make the dish. :-) It;s pure heaven!!!!!!!!!!!

      Akkshay Singhi u can always substitute mutton with vegetables of ur choice..Or go ahead make the dish without mutton.

    Parsi usually use home made special Meat cutter with which thy cut Meat pieces of 3" to 3.5" size of meat.

    I am a bit afraid of the dill you put in the masala. Dill is a very strong tasting herb. The amount you put in the wet masala would be very overpowering No??

    I love your recipes most of them but the reason I try to stay away is because I am not that computer savvy and wish you would just gve the recipes below.when I go somewhere else I get into lots of trouble trying to find also time consuming.Request from one ogf your fans,pls can you write at the bottom.thankyou.i leaving to see if I can get ingrediants from somewhere else sorry but sorry for me.

      +jennifer reyes Sometimes I find Lamb to be a good substitute for Mutton. At other times finding your local ethnic Halaal Market would be a great place to look for Goat meat (also known as Mutton).
