What a garbage take. People take advice from these influencers because they give good advice for home cooks. The majority of their audiences are never going to work in a restaurant. Also as someone who works in a professional kitchen setting the majority of their advice is perfectly sound the difference is applying it over and over again untill you perfect it which tends to happen when you work a minimum 8hrs a day in a kitchen.
