Trust me the jam idea sounds weird I know I made fun of it as well when a relative showed me with scrambled eggs but bloody hell it works. Never looked back since. Also if you have the pan/oil nice and hot you can get an amazing crispy bottom (east Asian style). Another variant I make is with guacamole on the brioche buns, crispy egg and a bit of sriracha sauce. Fire 🔥
