BANANA BREAD OATMEAL COOKIES:
2 1/2 cups old fashioned oats
3/4 cup all purpose flour
1/4 cup coconut sugar (or sugar of your choice)
1 tsp baking powder
1 tsp cinnamon
1/8 tsp salt
1/2 cup + 1 tbsp almond milk
1/4 cup maple syrup
1 tbsp ground flaxseed + 2 1/2 tbsp water
1 tsp vanilla
1 lg banana, mashed
1/2 cup chopped nuts (optional)
Preheat oven to 350F. Mix flaxseed and water and let sit. In a big bowl, add the oats, flour, sugar, baking powder, cinnamon, salt and nuts and mix well. Mash your banana. To the dry ingredients, add the milk, syrup, flaxseed mixture, vanilla and banana. Using a 1/4 cup measuring cup, scoop out 12 cookies and place them on a parchment lined cookie sheet. Press down slightly. Bake for 15-18 minutes. Once completely cool, you can store them in an air tight container or ziploc bag.
CHOCOLATE PEANUT BUTTER:
2 1/2 cups old fashioned oats
3/4 cup all purpose flour
1/4 cup + 1 tbsp coconut sugar (or sugar of your choice)
1 tsp baking powder
1/2 tsp cinnamon
1/8 tsp salt
1/4 cup unsweetened cocoa powder
1/2 cup + 1 tbsp almond milk
1/4 cup @syrup1tbsp90+ 1 tbsp syrup
1 tbsp flaxseed + 2 1/2 tbsp water
2 tsp vanilla
1/2 cup peanut butter
Preheat oven to 350F. Mix the flaxseed and water and let sit. In a big bowl mix the dry ingredients. Add the wet ingredients and mix well. Scoop out 12 cookies using a 1/4 cup scoop and place onto a parchment lined baking sheet. Press down slightly. Bake for 15-18 minutes.

Did you ever try the three ingredient oatmeal cookies? It has banana oatmeal and I think chocolate chips are the 3rd ingredient at least when I made them it was😂
