[YAKSIK] Traditional Korean Sweet Rice Cake

  • In Korea, the full moon in January of the lunar calendar is called the Jeongwol Daeboreum. On this day, special foods are made and many events are held. One of the representative foods is Yaksik. Yaksik means food that serves as a medicine. Yaksik is a traditional Korean food that is soaked with glutinous rice, seasoned with soy sauce and sugar, with nuts such as dates, chestnuts and pine nuts, and steamed. I made a Yaksik for the first time and visited my parents today. I miss them a lot.

    - Ingredients :
    Glutinous rice 3 cup (1 cup 200ml), peanut 1/2 cup, chestnut 15, jujube 20, walnut 1/2 cup, pine nut 1/2 cup, soy sauce 3 Tbsp, brown sugar 1/2 cup, sesame oil 1.5 Tbsp, cinnamon powder 1 tsp
    - How to make :
    1. After washing 3 cups of glutinous rice 3 times, pour cold water and soak for at least 4 hours.
    2. Peel the peanuts, fry in a dry pan, peel and divide into half.
    3. Peel the chestnuts and cut them into quarters.
    4. Remove the seeds by turning the jujube. Roll up the jujube to cut for a garnish and chop the rest thinly.
    5. Add jujube seeds and 3-4 jujubes to 4 cups of water and boil them.
    6. The soaked glutinous rice is completely drained from the sieve.
    7. In a bowl, add 3 cups of boiled jujube seed water, 3 Tbsp of soy sauce, 1/2 cup of brown sugar, 1.5 Tbsp of sesame oil, and 1 tsp of cinnamon powder and stir well.
    8. Put the glutinous rice in an electric rice cooker and pour the seasoned water mentioned the above No.7.
    9. On top of the rice, put all the nuts except pine nuts and jujubes for a garnish.
    10. Turn on the rice cooker and press cook button.
    11. After cooking, transfer the rice to a large bowl, add pine nuts and stir.
    12. Add 1.5 Tbsp of sesame oil and mix evenly.
    13. Put the jujube for garnish in a hollow bowl or baking tin, put the rice and press firmly
    14. Garnish jujube slices on the rice, press it with a spoon and cool it down.
    15. When it's cool down enough, take it out of the mold and cut it into pieces that are easy to eat.
