If you want my recipe, let me know. That steak cut is so lean that I'd cook it fast on high heat in my cast-iron Lodge skillet, in some Wagyu tallow with some butter for flavor. Then I would make sandwiches from the medium-rare steaks. I hope you're not mad or offended that I like to do something different from your recipes - I do that all the time, I can't help it! Hey, how are you? No, I'm not mad nor offended at all. That's the purpose of my videos for my subs to take what I show them and do something different. I'm trying to be a good teacher. It's hard, though because I have so much knowledge from being a chef and what my mother taught me. I have to remember not to get to technical with my terminology and techniques for that person or persons that I watching my videos and don't know the first thing about cooking.
