    My grandpa made this for me when I was little. He used to add some eggs and scramble them in the taters. 50 years later it's still my comfort meal. Thanks for sharing 💗

    So happy to have come across this gem from 7 years ago! Taters got an unnecessary bad wrap for a very long time. Taters are loaded with fiber, potassium and other vital nutrients. As my mama used to say, "they stick to your ribs" meaning they make you full and for longer.

    That dinner is so good that you don't even miss the meat! I grew up in a family of 5 kids that ate like that, and now that I'm married many, many years, I still make a big pot of pinto beans and cornbread once in awhile and a skillet of fried potatoes. One of my brothers lives about 3 hours from me, and he even makes cornbread and and beans. I love cornbread fresh out of the oven sliced with butter. Another time, I'll have cornbread in a bowl with beans and bean juice spooned over it and a couple of slices of white onion. And another time, I might enjoy cornbread in a glass with sweet milk poured over it. Growing up, we always had a vegetable garden, lived in the country about 4 miles out of town. We had meat once in awhile, chicken fairly often and always lots of vegetables. My mom was a great cook. She could make a really good lunch or dinner out of whatever we had in the kitchen cabinets. I love your cooking videos. Brings back good memories. Thanks.

    I was raised on this kind of food. Even tho I'm a native Californian, my parents were from Oklahoma. I cooked all my kids life, and called it "soul food" can still go in the kitchen & cook a meal from nothing.

      +Pat Newton I really want to teach people how to cook with these videos. I want them to be able to eat something in a restaurant or at someone else's house and go home and cook it.     I came across your channel by accident and being from GA and growing up on good ole country cooking I decided to watch some of your videos. I passed this video up but something kept speaking to me to go back and watch it. I believe God lead me to this video. Today's fear of the pandemic virus has a lot of us worried and fearful.     Thank you so much for posting this recipe. I finally got to have my mama's fried potatoes and onions again! She passed away 2 years ago and this has always been one of her recipes I just couldn't make. She told me how to of course but I could never get them to turn out right. I thought she had a secret ingredient or something. LOL
    Turns out it was the cast iron skillet. I got hers out and made them today with beans and cornbread. It was perfect... or almost perfect. I still wish my mom was around to make it for me. Bless you and your channel. You've posted so many recipes that my momma and grandma used to make and I've never been able to figure out how to make before now. Next I'm going to try the potatoes pancakes. My grandma told me how to make those but she didn't measures anything and I need a recipe :) again, thank you so much!

    Looked delicious. In Britain we have bubble & squeak. Left over spuds fried with left over veg, usually cabbage but anything will do as long as it's about 50% potatoes. I reckon I would love your hillbilly food. Just watched your fried green tomatoes too. For some reason I'm hooked on your recipes. Glad I found your channel I think it great

    This is great for a quick supper too, just add 4 or 5 eggs to make an omelette. Sprinkle with grated italian cheese at the end when mixture is still in the frying pan.Serve with a loaf of italian or french bread.

    Amen sister,I like to use my mother's electric skillet to cook up my potatoes and onions but also smoked sausage to go with the cornbread all buttered up. Thanks about the grape seed oil,keep up the good down home cooking recipes.

    Loved this video and your boldness is sharing the Gospel! PRAISE THE LORD. My husband was born in Arkansas and we recently moved to the Ozarks after retiring. I remember years ago when I asked him what people from Arkansas were called (i.e. California = Californians, Oregon = Oregonians, New York= New Yorkers) he replied without hesitation... HILLBILLYS! His favorite foods are cornbread and buttermilk, fried potatoes with onions, battered fried chicken, gravy and biscuits, and bread pudding. I have honed my cooking skills to accommodate these requests and when searching for a really authentic "hillbilly" recipe for fried potatoes I came across your video. Thanks for showing that family is SO truly important, and that getting right with God is what the world needs more than anything right now. Pray for our nation. Pray for wisdom. Pray for our children.

    I use Grape Seed oil when frying at a high heat as it has a much higher smoking point. These look delicious and I'll be trying them soon. Thanks so much.

    Every thing FRIED sounds good to me!! These potatoes look fantastic Becky!! I've been using cast iron skillets on my glass stove for 12 years without any issues! Now I'm starving for fried taters!!!

      +TheWolfePit I can't go longer than 48 hours without something fried :) Thanks, they were pretty good :) I'll keep that in mind and not worry about. I guess if one dummy slams a iron skillet into a glass stove they stamp a warning on it.

    Taste really good when you run out of fried taters to add okra to the dish as well as onion. As tomato and onion salad with green beans and chicken so very tasty

    Thank you for your testimony. I'm a born again Christian and i'm so thankful that I have peace with God. This is a crazy world we live in and i get concerned about my family's salvation. Please pray for them. They don't want to hear it from me, so I have to walk on egg shells. I just pray for the Holy Spirit to send someone to them.

      It seems like he did sweetheart, you. Be gentle like Jesus. Demonstrate Your faith in word and deed. I do know how You feel. It is like that in my family too. But, I am a free person with the right to speak, so I do, Carefully.

      No matter what, we can ask HIM to help them, but, He states in the Bible (Johns) it's strictly "one on one". Be rock solid in your faith, and don't let (as Jesus called him, "the evil one") or anyone else break you... I tell them it's my choice and you have yours. (Also, He says: "If you are not with ME. you are against ME.) ---- Peace, love, and happiness, "Only by the Grace of GOD do I walk forth". Amen!

    Who doesn't love fried taters & onions? This is beautiful, a recipe and a sermon, just so you don't forget to say grace before you eat. But, Becky's plate brought back a memory from a lifetime ago.
    When I was in high school (a very small one) there was a girl who was very poor, overweight and didn't dress well. I liked her because of her sense of humor but because my family was a lot better off, I ignored her when I was with my friends, the "big fish in a little pond" so to speak. She and I were only friends when my other friends weren't around and she never seemed to mind it. A few years after graduation, I went back to my hometown and couldn't find any of my friends so I dropped in on this overweight, homely girl. She was married, expecting a baby, living in a small single wide trailer and poorer than before but seemed overjoyed to see me. As we reminisced about high school she said she just had to feed me. I protested but she began to peel potatoes and onions. She had a pot of pinto beans on the stove already and while we talked she fried up those taters and onions. As she brought me almost half those taters with beans on top I was thinking, "how am I going to gag these down and be polite?" Well, they were absolutely delicious and had I not realized that she just gave me almost half the meal that would have been shared with her husband I would have asked for seconds! She moved shortly after my visit and I lost contact with her. Even though I had grown up in church and knew all the Bible stories this experience was like God slammed me over the head with a 2x4. This young woman gave you everything she had and even though you thanked her, hugged her and told her how delicious it was, you didn't recognize at the time how much she gave because you were too busy judging her. It's amazing what the impact of a single, home-cooked meal can have on someone. God hammered His point home a short time later when for 2 weeks I could only afford mayonnaise sandwiches! I've never taken a meal for granted since. Thanks for letting me share, and thanks Becky for the sermons!
    Oh, and PS, I never saw my other so-called "friends" after a year out of high school either.
