Several errors there which we can put down to your relatively young ages. Chromoly frames are by no means entry level. Entry level would be basic high tensile steel (and there are plenty of bikes made with that). Chromoly steel is light and strong. Reynolds tubing is Chromoly.
Regarding biopace; I agree it is weird. I have a bike with biopace and I can barely notice any difference to a round chainring. The ovalisation on biopace is quite subtle (not as pronounced as modern oval types). And I agree, increasing the gears when the crank arms are parallel to the ground makes most sense.
Chromoly doesn't have to be bad, I think Jimmi should spend 2024 exclusively riding a bike with a "hi-tensile" steel frame as penance.

really confused at chromoly being listed as a bad thing, that’s generally a selling point for a high quality steel frame….🤔
TRP Spyre mech disc brakes are wonderful. They absolutely sit between rim and hydro.
I had gutless Tektro "Cervelo" calipers on a 2009 S1 which were still pissweak with a pad upgrade (little difference between them and 2001-02 Tiagra).
105 R7000 groupset (new bike, same wheels) were a muh-hoosive upgrade, plus SwissStop BXP pads again, made a notable difference.
Stock TRP Spyres (160/140mm) out did the R7000s by a similar amount, felt like the same jump after using SwissStop 'C's
To put it into a non "feel" perspective; I'm 105kg, Morrison Ave Wombarra is a 180m @ 15% descent into a T - intersection (!). Rolling in at 27-30km/h across the train bridge, straighten up and full brakes at 170-160m to go... With the TRPs I'll come to a stop 20m before the corner. The R7000s I'm a bike length across the intersection (as it levels off) when I come to a stop.
The old Tektro calipers performed the same as the 105s but I was 10kg lighter.
I think I'd need to be back down to 96kg and a 180mm rotor (which I do want to try) on the front to actually throw me over the bars.
As for mech disc being "fiddly"???? Compressionless cabling lasted 6 years before changing frames/lines. Pad adjustment twice before needing replacing and a reset.
One spends a buttload more time and effort on chain and tyre maintenance than on brake faffing.
Chrome Moly is high quality tubing for steel frames.
I had a good laugh at "Cromilee." Chromoly = "Crow, Molly" as in the elements Chromium and Molybdenum. And to think the English give Americans such a hassle over "Aluminum!" Also, it's a fantastic steel for bike frames, or so I'm told.
Yeah I memorized chromoly's pronunciation from from growing up in the 1970s and 80s. lol Everything was chromoly back then. lol
I have mechanical disc brakes on a gravel bike. If you do a lot of things exactly right, and if you compare to braking on carbon rims, they're ok. But yes if you don't get all your ducks in a row the can be awful

Jimmy should have given Francis an Aluminium fork, not steel. Steel is actually a good material for a fork, Alloy definitely not, as it is harsh. Going down that line, early aluminium frames in the same diameter as steel tubes were a very poor thing, before frame designers realised that oversized frame tubes for alumnium were the way to go.

If you’re lucky enough to find them, some 19mm wide tires, at 140 psi or higher, would complete your build. If those are unavailable the 23mm wide solid tires are the next best thing

As someone who has a "Cromoly" (which Jimmy cannot even seem to pronounce), I will admit, this video was hillarious. It hurt also, but hillarious nevertheless. Trust me, after riding bad bikes all my life, riding a proper steel bike made of Cromoly steel and not hi-ten steel was amazing. five years on and 20,000 km later I still love my Marin Four Corners!!!

Mechanical disc brakes are worse than rim brakes? Tell that to my growtac equal mech. disc brakes set up with compressionless housing.
