Impossibly Easy Cherry Custard Pie - Recipe using Bisquick

Pie:
1/2 cup bisquick baking mix
1/4 cup white granulated sugar
3/4 cup milk
2 tbsp softened butter
1/4 to 1 tsp almond extract
2 large eggs
1 can (21 oz) Cherry pie filling - drained (keep the liquid)
Streusel topping:
1/4 cup bisquick mix
1/4 cup packed brown sugar
1/4 to 1 tsp cinnamon
1 tbsp or 2 tbsp softened butter
(stir together the bisquick, brown sugar and cinnamon together, cut in the butter and blend until you get coarse crumb texture, I started off with 1 tbsp of butter and added a second one because I thought it looked too dry, I forgot to mention this in the video).
Drain the cherries from the pie filling, reserve the liquid.
Combine the 1/2 cup bisquick, white sugar, milk, eggs, almond extract and 2 tbsp butter together in a small bowl (a whisk works best).
Pour this into a 9 inch greased pie plate.
Spoon drained cherries around the pie. Place several 1 tsp dollops of the cherry pie filling liquid around the pie (optional).
Bake for about 20 minutes at 400 F. Remove from oven and top with the Streusel topping. Continue to bake until a knife inserted in the center comes out mostly clean and the streusel has browned a bit.
Allow to cool completely before slicing.
Keep refrigerated.

Strawberry would work. The recipe specifically stated not to use blueberry pie filling for some reason, not sure why.

That looks so good! I might be tempted to skip the struesel topping and go with a dusting of powdered sugar instead, and then top with a scoop of vanilla ice-cream and a drizzle of the leftover cherry filling. 😊🍒🥧
It needs a little extra something something on top, ice cream would fit the bill nicely.
I long believed that Bisquick mix was primarily used to make biscuits. But since that you just made a pie out of that mix, I’m glad to hear that it didn’t taste really flaky and soft, like most biscuits are!
I always have a box of this mix in my pantry, very versatile stuff.
