Mexican Noodle Soup (Sopa de Fideo) - with Chorizo!

- Sopa de fideo is a comforting Mexican noodle soup with thin noodles toasted golden brown, then simmered in a spiced tomato broth, so easy to make. I like to add spicy Mexican chorizo to mine, though you can omit if you'd prefer.

THINGS YOU’LL NEED:
3 medium tomatoes or use 15 ounce can tomato sauce
1 small onion chopped
4 cloves garlic
1-2 teaspoons ancho powder
1-2 teaspoons guajillo powder
1 teaspoon Mexican oregano
Salt to taste
2 tablespoons vegetable oil or use butter
4 ounces Mexican chorizo optional
8 ounces dry fideo noodles or use vermicelli or similar fine egg noodles
4 cups chicken stock use 1.5 cups for more pasta like (fideo seco) - use 6 cups for a soupier sopa de fideo
For Topping. Fresh chopped cilantro, queso fresco, chili flakes, lime wedges, avocado slices, crema. And hot sauce!

@@ChiliPepperMadnessI use to luv valentinas hot sauce. So much that I lost my gallbladder. Valentinas will clean a rusted toilet. High acid
I bet that using chorizo in that dish is totally the way to go, looked gorgeous. I’d accompany my bowl with a few chunks of fresh crusty baguette to soak up the goodness.

That looks absolutely delicious Mike. The way the noodles are toasted in the pan reminds me of a dish called Assassins Spaghetti (honestly, that's it's name) which is cooked in a similar manner. Great stuff as always. Thanks for sharing.

Love it! Never made it, but will tonight. It occurs to me that if you used vegetable stock, this would make a perfect vegetarian offering. Myself, I will be adding in the cheap chorizo that I always keep on hand (Mostly for omelets), along with the broth and some browned chicken thighs... Just to prevent that from happening!😊

I'm not a fan of chorizo. But I'm definitely going to do this with some barbacoa. Looks dank

another great recipe I need to try out! a little Gochujang or chipotle in adobo would go nice in there Mike . I really loved your Korean fire chicken , please continue to show us these amazing meals , and I know you have done lots of hot sauce work on here but if you could really continue teaching us in a very simple and easy to understand way how to do hot sauce in many different ways , different ways to achieve various consistencies , the different flavours that can go in and are used which I know are many but it gives you lots of content to do , different ways to do the peppers , different ways to get all kinds of different colours from red to orange to yellow to green , how to add smokiness to them , the different ways to add acid , or ones without , literally just dive deep with us on all the little and big things of making hot sauces . You know what else would be nice , how to preserve them so we could send them to family , so we could keep them on the shelf , how to keep them longer after opening , there is so much to learn with hot sauce , and BBQ sauce and even salsa , it can really keep you busy on here where we can learn a lot . Making chili oil is amazing for us too .

I'm told that a true fideo (at least in the Marfa area) is made with goat. Of course this means that I'll have to try it with goat. And chorizo. And then a mix of both.

Except fideo is not a soup! I live in South Texas and grew up eating this one it's not supposed to be very runny like that.

@@ChiliPepperMadness will going back to my ancestry we've never had it as a soup here it's always been like more of a pasta or a goulash type dish so I've never seen the soup I'm not saying it's wrong I'm just saying that I've never seen it that way before I am going to make it and I'm going to try it I went to Cordon Bleu in New Orleans so I wanted to further my culinary and I never use it as a job but I wanted to know more about why my ancestors did what they did and why they did it I wasn't saying you were wrong I'm just saying I've never seen it that way before.
