Winter Chilli - outdoor cooking on a frozen lake in northern Sweden (MSR whisperlite & Trangia) 4K

    Camping in the snow and 15 below, that’s a clear cut case of freeze-dried or pe-made right? Hell no.
    Cooking proper food is always possible. Rob is quick pickling green chiles, roasting and rehydrating dried smoked chiles, confiting garlic, all mostly while being able to keep his warm gloves on!
    This chilly outing is part of a Nordic skating trip on lake Rogen in the Jämtland region of northern Sweden. Too much snow for skating tho, had to improvise and use skis instead. Much like u gotta improvise when all your ingredients froze on ya.
    Quick pickled green chillies
    Equal parts sugar, vinegar & water
    Green chillies…that froze
    Heat up pickling liquid and pour over chillies.
    Smokey winter bean chilli
    Carrot…that froze
    Onion…that froze
    Celery…that froze
    Chopped tomatoes…that froze
    Borlotto & kidney beans…that froze
    Dried smoked ancho chiles and guajillo chiles, toasted, rehydrated and deseeded
    Chipotle paste
    Tip!! Dried chiles with different flavour profiles (few of them are very spicy), that you toast, rehydrate and deseed, are THE way to make a base for Mexican or Tex-Mex dishes.
    Sauté carrots, onions and celery. Add rehydrated chilis and chipotle paste. Add chopped tomatoes. Cook for a while. Add beans right at the end. Taste and adjust seasoning.
    Garlic bread
    Whole garlic cloves in oil
    Bread
    Cook whole garlic cloves in the oil on low temp until they’re soft. Smear cloves on toasted bread.
