We have made flour with yellow dock. When researching dock flour, the consensus was to winnow the seeds before grinding because they have a hull that can be bitter. We chose not to winnow our seeds because it is a HUGE pain as the seeds are so small. So we put the seed, husk and all, into our blender and Voilà! Yellow Dock Flour. We have used it in bread, muffins, pancakes. It tastes wonderful, is not bitter and is a lovely dark color. It is moist and dry at the same time....meaning, you don't use as much liquid in your recipe and the texture of your product is flakier or crumbly. We have found that it is best when used as an additive in your recipe instead of as a substitute. We used only dock flour in our brown sugar muffin recipe and the result was they fell apart in our hands when we took them out of the muffin cups. They tasted delicious though, so it was worth dealing with the crumbles.
I have no clue if I have yellow dock or other dock I cannot get rid of, so I do what I always do when "fighting weeds" - look up what is edible. I harvested a bunch of seeds in the fall, and Judy, you are so right, winnowing is a major pain and I too just throw the seeds in the blender. I mix them into my bread dough at times. If I want to add them every time I need to collect a lot more this fall, but they are there :) I dig up my burdockroots too!
Yellow dock has truly been a life saver for me! I used to suffer with horrendous constipation. When I would have severe episodes the pain got so terrible that I honestly thought I might die(the episodes would last anywhere from 6-8 hours!). I tried so many things with little to no success. About a year ago I stumbled across yellow dock and gave it a try. I am SO grateful to have found this amazing herb! Combined with magnesium, it's changed my life! I take it daily and it always delivers! ;)
@@wantapai I take Solaray 500mg daily(@ lunch) and as I mentioned, magnesium(CALM powder drink) before bedtime. Once in a while I will take 2 yellow dock in one day(spaced apart).
I've used yellow dock for mosquito and ant bites effectively. For the mosquito bite I simply rub the leaf of the plant on the mosquito bite until the liquid from the plant is released. For ant bites I will rub the plant vigorously to get the liquid from the leaf and then I tape the plant piece to the ant bites as a poultice and leave it (about 20-30 minutes) or till itching stops. Sometimes a second poultice is needed about 12 hrs later to fully heal the ant bite.
