andhra cuisine, meal, andhra biryani, nellore biryani, nandhana palace, bangalore’s largest andhra restaurant chain, sholay kebab, drumstick soup, mutton bone soup, chilli chicken, chicken kshatriya, chicken amravati, nellore mutton biryani, mati kodi biryani, chicken biryani
In good times or bad, Bengaluru loves its biryani and the one biryani that is perhaps most favoured here is the Andhra biryani. A biryani that’s nuanced in its depth of flavour and finds its roots in the Nellore district of Andhra Pradesh. In this episode of Gourmet On The Road, I catch the making of this traditional biryani from start to finish at the newest outpost of Bengaluru’s largest chain of Andhra restaurants, Nandhana Palace. In doing so, I chat with second generation owner, Shweta Ravi, and learn of her family’s commitment to culinary traditions over three decades, and also savour the many creations of the kitchens here that are now synonymous with Andhra cuisine. Hope you enjoy this one. Stay safe and happy eating!
    Drumstick Soup
Made of drumstick marrow and leaves, this is a soup that’s warming and rich in nutrients.
    Rs. 95 (usd 1.3)
    8/10
    Mutton Bone Soup
Mutton bones simmered over hours into a spicy broth, served with a tender piece of meat that offers a juicy bite of this soup.
    Rs. 120 (usd 1.6)
    9/10
    Carrot 65
There’s little in the flavour of the reddish-orange batter-fried discs tossed in garlic, curry leaves and spices that reveals it’s made of carrots! If you are a vegetarian looking to savour the flavour of the legendary chicken 65, this Nandhana Palace invention is perhaps the closest you can get.
    Rs. 185 (usd 2.5)
    8/10
    Sholay Kebab
This invention of the kitchens at Nandhana Palace is now synonymous with fried chicken Andhra style. Marinated in a yoghurt and spice masala and deep-fried, the result is a kebab that’s moist to the core and seriously addictive.
    Rs. 270 (usd 3.6)
    9/10
    Chilli Chicken
The chicken is coated in a sauce of naati (local) green chillies that packs a ferocious, palate-numbing punch. If you have a high tolerance for chilli heat, do pop a few of the whole chillies floating in the dish to derive the painful yet satisfying pleasure of indulging in the Andhra chilli chicken.
    Rs. 240 (usd 3.2)
    8/10
    Chicken Kshatriya
This dish is an ode to the family’s Kshatriya lineage. Stained bright yellow with turmeric, the fresh flavours of the masala hold to the chicken leg, making for a flavourful bite. A touch of cashew nut also renders a rich note to the sauce alongside the pungency of garlic.
    Rs. 270 (usd 3.6)
    9/10
    Amravati Chicken
Boneless morsels of chicken cooked in a semi-gravy rich in the savoury flavours of fried onions, curry leaves and hint of fennel.
    Rs. 280 (usd 3.7)
    8/10
    Mutton Pepper Fry
The meat is cooked to pink tenderness and its flavour reigns supreme beyond the pepper-rich masala. The cooks at Nandhana Palace certainly know how to treat the meat right.
    Rs. 290 (usd 3.9)
    9/10
    Bamboo Chicken
A tribal dish that finds its provenance in the Araku valley of Andhra Pradesh, it features chicken that’s marinated in green and red chillies, ginger, garlic and other fresh ingredients, and then poached in its juices in a sealed bamboo cross section over fire.
    Rs. 299 (usd 4)
    8/10
    Nellore Mutton Biryani
Layers of flavour from the spices - cloves, cinnamon, marat moggu, bayleaf, etc., waft through your palate when you place a morsel of the basmati rice in your mouth. You can also taste the underlying sweet acidity of the pineapple, a unique ingredient of the Nellore biryani. The meat has a bit of a bite, and is flavourful.
    Rs. 290 (usd 3.9)
    10/10
    Nati Kodi Biryani
Made with short-grained seeraga samba rice, the nati kodi biryani takes over the palate with its spicy, green chilli laden flavours laced with the freshness of coriander and mint, and the toasty savouriness of fried onions. The rice when tasted on its own has a salty edge which complements the feisty character of the country chicken.
    Rs. 270 (usd 3.6)
    8.5/10

Andhra people are decent, generous, honest, industrious, hospitable, inspirational, amenable, affable & has aspiration to achieve pinnacle of success. Now, if one were to amalgamate aforementioned adjectives denoting qualities of Andhra people, a plate of sumptuous & scrumptious Biryani will come out.
May Allah bless Andhra people with success and prosperity!
