Recipe: You will need..
For the potatoes...
5 medium potatoes (peel... then cut into 2 inch cubes
boil until tender, drain, and put in a large bowl still hot)
add 4 oz. cream cheese / 8 oz bag of chedder cheese
1 tsp. sweet bazil / 1/2 tsp. salt / 1/2 tsp. pepper
Then ...(take 1/2 cup sweet onions and 1 tsp. garlic and
saute in butter until tender ... then add to the potatoes)
Blend it all together in a large bowl (set aside)
For the dough ... put in a stand mixer...
3 cups all porpose flour and 1 tsp. salt / start mixer on stir.
add 1 egg beaten / 1/3 cup melted butter (you can use less)
Then add 1 cup warm water a little at a time until flour makes
a sticky ball... (you may not use all the water) then add a tiny
bit of flour at a time until dough ball pulls everything onto the
dough hook and starts kneading the dough.
Run for 3 minutes and remove dough from mixer and place
in a bowl and cover for 15 minutes. Roll onto a lightly
(flour covered) surface until dough is 1/8 inch thick.
Cut into 6 or 8 inch circles and put a rounded tbsp. of
the potato mixture in the center, fold over and pinch the
edge to make sure the potatoes don't come out when boiling.
Drop the Pierogies into boiling water and cook for 5 to 8 minutes
or until the dough is tender.
Plate them up and drizzle the white sauce mixure below...
To make the sauce...
In a frying pan put 2 tbsp. butter and 2 tbps. flour
cook on medium heat for 3 minutes. Stir with a wisk constantly
(you are making a roux) then add 1 tsp. chopped garlic and
1 to 2 cups whole milk until the sauce is smooth.
Salt and pepper to taste!
You can also put a spoon full of sour cream on top and
garnish with parsley or chives!
Special Note!
Cheryl said she really likes them the way her Mom makes them!
They take them right out of the boiling water and finish then
off in a cast iron pan with just butter and a touch of fresh chopped garlic! This sounds great!

Pierogis..yum..My polish Dad made amazing pierogis (which I make now,too) . After boiling and draining well, he browned chopped onions in butter and slid the pierogis in and slightly browned them up with the caramelized onion and butter mixture. With kielbasa and his sauerkraut(special recipe) , a kid felt well fed for a REALLY long time. Thanks now I know what supper will be😋

I've never seen perogies outside the Midwest and yes, they still sell them in the frozen section here.
My mom used to make pierogies and after boiling they'd fry in butter in a cast iron skillet till slightly golden on each side. These look very nice! I've seen some people eat them with a "gravy" and some like them plain or with sour cream. I liked them with moms homemade concord grape jelly on them. The sweet and savory flavors were a nice blend.

Oh Thanks Sheila I made these, they were good, I fried mine in the butter and garlic in the iron skillet. The bottom of the sifter doubles as a dough cutter for the periogis. Lol, I can hear Steve say, “well Duh.” Golly thanks for keeping him with us. I loved your Story bout yer Daddy makin Big ol biscuits for the church ever Sunday morn. P.S. I used my mammas rollin pin to roll out these peirogis. Mamma was from Blount County, Ala. Daddy was from Kansas, Ala. grandma lived in Jasper. ( Carbon Hill) 2001 tornado that came through Walker County...her house was on the news, helicopter flew over the barn was in the pond. The 2 big Oak Trees were on the house in the shape of a cross. Both my grandma and grandpaw made it out alive

Potato and farmer cheese as well as sauerkraut are some more traditional fillings. Also steamed or sauteed in butter are good. Thanks for sharing.

My Polish grandmother who came off the boat when she was 13 , made the best pierogies , made them with mashed potatoes, some with Sauerkraut and Kabasa , ham !!! Boy sure miss the smell of her kitchen when she was cooking !
So glad you covered pierogi! Fun fact, pierogi is already plural (no S at end needed) and 1 is a pierog. My family are Polish :)

My sister married a Polish guy and learned to make pierogies, Lots of people said hers were the best they had ever eaten, She always fried them in butter after boilig, She is goe now but I"; always remember her with all the grandchildre she could scare up making pirogies. Any that were left over from Christmas she froze and we ate them at Easter, They are great with ham and kielbasa, My favorites are sauerkraut filled and also plum filled.

Perogies are very popular in parts of Canada with a significant Eastern European population. My city has a LOT of Ukranian families so you can find perogies in every grocery store here. When Steve mentioned trying them in Saskatchewan, it's not a big surprise - the Canadian Prairies were primarily settled by Eastern Europeans like the Ukranians and the Polish. LOVE perogies! :)

Those are the biggest pierogies I’ve ever seen lol, you can use a glass 🥃 to cut them out . After boiling sauté them in butter in an oven safe pan , put sautéed onions and cheddar and melt , serve with sour cream 😍
Salt the water, I make about 350 to 400 at a time, sauerkraut filled, boil and then fry in browned butter and bacon fat. The perogie floats and looks wrinkled and firm, they're done, Fry, then top with sour cream onion soup mix dip or some butter and vinegar

Knead noodle dough?? Resting is important. Dusting the cutter work well. My Polish family had over 30 stuffing. Meats, veggies/ fermented,
Potatoes, fruits/ plums and farmer cheese. Serve with sour cream or Applesauce. Cheap food from Northern countries that do cows and root vegetables.

I lived in Pennsylvania when I found out about these. sauteed in bacon fat mashed potato with diced Jalapeno peppers😁.
For cinnamon and sugar recipe - my mom and I would do this (she is no longer here sadly - lost her in 2015) we would take pie crust, rolled out into a thinnish rectangle - use a pastry brush and brush melted butter ALL over it and then sprinkle cinnamon and sugar, roll it up into a roll basically - like a sushi roll - and then cut inch wide pieces and then bake maybe 10 minutes at 400? Or 12 min at 375? Not sure exactly on that. The inside with be just done like a little doughy and tender and delicious and flaky. Please try it and tell me what you think!

Could you freeze them? Would you do it before cooking or after?
Yes, you can freeze cooked pierogi, that's a good way to save leftover dumplings for later. But if you're making pierogi with an intention to freeze them - don't cook them fully, just blanch them for 30 seconds in boiling water.

The sour cream makes the dough tender and adds to the flavour.
i like them with sour krout, mash taters and cheddar. Fry in butter with onions yummy.

was looking at recipes the other day and seen one that was like a casserole that was lined with Potatoes (I think) then ham was rolled around a piece of cheese and stuffed in . but I can't find it. did you do this recipe?

I think I would use beef broth instead of water.
