    Chinese street food: it's a way of life here in China. People are constantly on the go, and being able to grab a quick snack or bite to eat is crucial to people here. I'm in Lanzhou, the capital of Northwestern China's Gansu Province, and a popular street food here (and everywhere else in China) is Jian Bing (煎饼), a kind of crepe or pancake that is made right in front of your very eyes! It's an amazing little gem that can be found anywhere in China, and it's always good! Shandong Crepe, Shandong Pancake, Shandong Jianbing, Shandong Wrap....there are so many names for this good, and guess what? They're ALL good!! It's one of China's most famous street foods, and for good reason!

    I used to buy these crepes at night from a vendor at the gate of a university in Guangzhou, 2012-14. Delicious!

    这是山东煎饼和煎饼果子的混合物吧…顶多算个涂了酱的煎饼卷菜叶子。煎饼果子比这软,山东煎饼是只有饼不加料的。好像这东西只有南方会比较多,北方这边这两年才开始有卖的,小时候跟本没见过。

I'm glad you showed this because from my experience I never really saw this snack in Shanghai. I don't doubt that it is there but I guess it's just not as common. Great choice. You should make like a little street food mini series!

    煎饼果子 pronunciation: jian bing guo zi. A kind of snack all around China, very common in downtown. The crisp stuff in it is called guo zi.The cover is called jian bing. So all together are called jianbing guozi. The stuff and cover are various in different provinces. In Northeast of China, the stuff is Deep-fried stick called you tiao - a traditional Chinese breakfast.The cover is made of powder mixing water. Jianbing guozi in this video is common in ShanDong province or southeast of China. Its cover is made of corn powder mixing water. Anyway, all these variants are delicious and worth to eat. btw, 'a bite of China' is a name of Chinese food documentary film, you can find on youtube. It tells a lot of famous Chinese traditional food. Welcome to China. It will satisfy your stomach and sense of taste in China wherever u come from.

    This is Jian Bing Guo Zi(Not just Jian Bing), Which means Freshly Made Jian Bing with chicken egg(Chinese barely eat fresh Duck Eggs, Duck Eggs are always salt pickled or made into THOUSAND YEARs eggs) and rolled with some stuffing(You Tiao, the fried bread stick or crispy noodles/bread) with green onions, cilantro, and sauces. Jian Bing Guo Zi is from Tianjin City, a very major city of China right next to Beijing. Jian Bing itself was invented from Shandong, it is just the (Corn, Mung Bean, Soy Bean, or other kinds of beans)meals puree made into very very thin crepe. Right after they make the crepe while it's still hot and kind of soft, they fold it into squares. After the folded crepe becomes cold, it becomes very very hard to chew(That's why Mexican corn meal made food required a lot of lard or butter or other types of things just to make the corn meal moist). It is the type of food for poor people long time ago, because these crepes(Jian Bing) fill you up really quick, because they are dry, tough to chew, and require eaten while drinking a lot of water. And they are difficult to digest. Now a days, these crepes themselves are more considered as snacks, because people mix the corn meals or other type of meals with flour to make the crepes, and dehydrate them completely, so they become very crispy. It will taste like tortilla chips now.

    A Bite of China covered jianbing in episode 2. There really isn't a legit way of making it...I mean I'm from Shandong and people would assume all jianbing over there are like super tough and have no topping, but the jianbing we use to make jianging guozi - which, btw, is basically burrito - are made from super watery batter, even more loose than this.

      Hey, dear friend friend from Shandong. I am from Beijing and I am also following A bite of China. I think 煎饼果子 got the inspiration from the other. Although I am not sure where 煎饼果子 was originally invented. Austin, the one you showed in this video is more on Shandong type side. But if you finally decide to go for Tianjin. you will have Yummy chance to have another type of 煎饼果子 which is softer and just a hint of chewy。

      +Austin Guidry yes indeed it's interesting. People adopt the food cooking style and ingredients as per local tastes.
      For instance in Hyderabad itself there are 25-30 different types of dosas now a days (earlier there are like only 3 types). I sure wanna taste this new "Chinese dosa" (the way I named it:)! ..

    I donot think this jianbing is from 山东,山东煎饼 is much harder and dryer,and donot combine with egg or vegetables,and fold in square。 This jianbing is allover in china,but I think It is from tianjin

      kind of, tianjin was a military camp during late qing , the majority of its military personnel come from shan dong, so,its origin is indeed shandong. with a little localized ingredient of the capital city

      kala kalz key difference: Tianjin Jianbing’s dough is a batter, made of a mixture of mung bean flour and regular flour. Whereas Shandong Jianbing, like it’s shown in this video has a relatively solid dough made of just flour

      Its called crispy noodles/bread depends on the shape. It is basically deep fried flour bread.

    She seemed a bit inexperienced, i got this in shanghai where there was a huge queue, and it was some old guy making one every 30 seconds, it was great. He would crack two eggs open at a time... with one hand..

      +lucas ns It was either salt or MSG. It was too fast for me to really see - most places don't add that at the end, though. Usually they are done after adding the crispy wafers and/or the vegetable

      Its likely salt, but to be honest, this lady is not cooking it traditionally.... The way she's cooking is weird.... The dark soy bean paste should have provided enough saltiness. RUclips Jian Bing Guo Zi, you should see others cooking this.

      xe yesen 山东煎饼和南方街头的煎饼不一样,是又硬又韧的饼,咀嚼起来很累的,中间夹的脆饼我不知道是什么时候开始流行的,但是我觉得那玩意很难吃。
