In this one, like in many others, it doesn't seem like the egg really gets cooked at all. Is that truly the case once you bite into it, or does the heat from the pancake cook the egg by the time you go to eat it?
+irpacynot Very good question. I think the intense heat of the makes it possible to cook the batter without flipping and also to cook the egg without flipping. The egg is not even noticeable when you eat the jian bing. I tried to cook this recipe using a regular pan and also using a crepe pan on an electric stove. On a regular electric stove the batter needs to be flipped. The egg will not cook properly without being flipped. Thanks for your question and comments. In Xi'an, I bought a jian bing and I thought the lady said shi kuai but she corrected me and said it was si kuai. Thanks for clarifying the price for me. I was thinking the lady gave me a discount for videoing her.
+Dan Seto (Chinese Canadian Roots TV) Standard Mandarin is not the native language for most Chinese, many people can not pronounce 4 si; 10shi correctly. 4 is the fourth tone, and 10 is the second tone, so it's obvious that she said 4 because she used fourth tone.

if mandarin syntax didn't change that much in last 20 years, the lady said A: A) shi kuai wu = 10 Yuan and 50 cents B) shi wu kuai = 15 Yuan (about 3 canadian dollar, correctly) 10,5 RMB = 2,15 canadian dollars = 1,5 EUR = 1,6 USD In my opinion, not cheap at all, especially because you didn't take the mini wiener and the spice sauce. Just in my opinion. :D

I am more of a fan of the GZ version and I like two eggs and double Bao cui but I am all for any version of a Jian BIn.
