Lovely set, you could add the Accurate Rev War figures to this too. As for cavalry I once butchered some Marx union troopers to make the British Legion cavalry and Washingtons Dragoons. The union cav already had a kepi on which is almost like the light dragoons jockey cap, just use miliput or green stuff to add more height, the turban and front plate. The jackets were always short so no carving there, most carry a sabre so no changes needed there either. Just add belts and cartridge pouch on the back carving off anything superfluous. I also used one militia mans arm with the flintlock pistol for one of them, so you can always do that. Fun project there. As for gunners, there are some out there, company name escapes me right now though.

Then use an exacto knife, miliput or green stuff and you can quite easily come up with an approximation of kilted highlanders. If however you want ones in overalls then again use the knife and expoxy to make suitable bonnets.
