- Hi everyone,
One vegetable/side dish that we always like to order when we are eating out is “Kadai Paneer”. I am sure at least one member of your family is a Paneer lover too. Today I am sharing my version of the Kadai Paneer that is not only easier to make but super tasty. It is sure to become your family favourite too.
If you are vegan, just substitute paneer with tofu and try this recipe.
I always keep a bottle of the Instant Kadai Masala. It is handy to make any kadai vegetable in minutes. I also pack a bottle for my children and they have always given great feedback that it makes life( cooking) simple by not adding so many masalas and instead just add this one dry masala powder that gives immense taste to any dish. So this is a bachelor/student friendly version of the Kadai Masala.
Now, let me share the recipe.
Kadai Paneer Recipe By Masterchefmom:
Ingredients:
For the Instant Kadai Masala (Dry Masala, No Grind Version)
1/2 tsp Turmeric Powder
2 tsp Red Chilli Powder
4 tsp Coriander Powder
2 tsp Roasted Jeera Powder
1 tsp Black Pepper Powder
1/2 tsp Garam Masala
Kasuri Methi
pinch of sugar
For the Fresh Masala ( Wet Masala):
2 tbsp oil
1-2 garlic cloves
1/2” ginger
1 onion
2 tomato
1-2 green chilli
1 tsp cashew nut ( optional)
salt to taste
To saute:
200 gm paneer ( cubed)
1 onion ( cut into large squares and remove the petals)
1 tomato ( cut them in the same size as the onion)
1 capsicum ( remove seeds and cut them in the same size as tomato and onion)
2 tsp oil
For garnish:
Kasuri Methi leaves, coriander leaves and cream ( add as per taste)
Method:
1. Mix all ingredients given under the Instant Kadai Masala and transfer it to a clean dry bottle. We are going to use just 1.5 tsp of the prepared masala.
2. Next step is preparing the fresh masala. Heat a kadai with oil and fry all the ingredients given under “Fresh Masala”, allow it to cool and grind to a paste.
3. Heat oil and saute’ the paneer and vegetables and keep them aside.
4. Add 1 tsp butter, 1 tsp oil and add instant kadai masala powder, mix and immediately add the ground fresh masala. Allow the masala to cook over low flame till the oil starts to separate on the sides of the kadai.
5. Add the paneer and the fried vegetables. Let it cook for 2-3 minutes and switch off.
6. Garnish with coriander leaves, kasuri methi and once it cools a little, add cream.
Your delicious Kadai Paneer is now ready!! Serve it with your favourite breads or with rice.

Hello MasterChefMom, Your kadhai looks different. It seems to be made of a different metal. Curious to know what is that utensil and where can it be purchased in case it's recommended.

You get roasted jeera and dhania powder. I use Everest Masala and MDH Masala. If you want to make roasted jeera powder at home, just dry roast jeera, cool and powder them.
