  • Katsuobushi is Japan’s processed food made by steaming, drying, and fermenting skipjack tuna meat. It is a must-need ingredient in Japan, usually used to make broth and as garnish for seafood. Katsuobushi is savory, so it’s used in udon, takoyaki, and so on, and it's also called “dried skipjack tuna.” We visit a katsuobushi factory near a port city in Japan where they continue to make katsuobushi using the traditional method that's been handed down for 3 generations and learn the process.
