@waichesey1143 您好,如果整型之前辮子斷開,有可能是麵筋太強鬆弛不夠,或著是辮子條辮太緊。可以再多鬆弛一點時間(天氣太熱可以密封放冰箱冷藏鬆弛),還有編辮子的時候松松辮即可,不要拉太緊。

您好,如果焗烤時候塌陷一般就是發酵過度了。
通常麵包發酵程度判斷可以用按壓的方式輔助判別。
判斷麵團第一次發酵程度,可以手指(沾麵粉防沾)戳一個洞在麵團上,不塌陷不回彈就是剛剛好。
第二次麵包坯子發酵,可以輕輕按壓麵包表面,緩慢回彈、不快速回彈,不塌陷,同時有指印就可以。
