Fish Broth: Either use a fish broth cube or do it Tommaso's way:
Boil in a pan for around an hour to an hour and a half 1 chopped carrot, 1 chopped celery stalk, 1 whole onion, 1 fish or leftover fish heads, pieces. Strain broth after cooking and before adding to the risotto.
Prawn Butter:
Melt 150g butter in a pan full of prawn shells and simmer for 10 minutes. Mash through a sieve and strain again to remove shell parts. Conserve in fringe until needed.
Lemon Oil: Simply grate lemon zest into olive oil! You can use this on salads and fish, meat, veg and all sorts or dishes.
Risotto:
80-100g carnaroli rice per person
150g fresh prawns per person
bunch of parsley
Toast the rice in a hot pan for 30 seconds then start adding ladlefuls of broth one by one while stirring. Check the rice cooking time on packet and add the prawns 5 minutes before the end. Keep stirring and keep adding ladles of broth. After 3 minutes add the prawn butter and stir well. When the rice is cooked add the lemon oil, then sprinkle parsley on top to serve.

My favorite part of Sunday morning is sipping my tea and watching what’s going on with Nikki and Carlo. This week was was extra special for many reasons. First, Tommaso’s seafood risotto looked amazing. Nicki, we personally thank you for keeping your videos light and drama free. There are plenty of places that I can watch or read if I need updates on current events. I have been watching your videos for about three years and you have provided a much needed escape of the “stuff” going on around us. I, we need an escape. I live in Los Angeles California, we have more than our fair share of the Ukraine war, death, climate change, covid and mask controversy, stabbings, shootings, car jackings, high speed chases, homelessness, poverty and infernal politics. Even during both world wars which I was not alive during, there was escapism from conflict, a trip to a movie theater or radio programs. Please continue providing that chance to escape, life being what it is, whether I ever get to Positano Italy or not. Peace to you and your family. We will keep watching ignore the haters.

Yes it’s true we watch your vlogs for the Amalfi coast and your family, but I am glad you acknowledged the fact there is a war, some vloggers just go about their filming as if they don’t live with what is happening around them. Some like the château diaries with Stephanie Jarvis even offered to house a refugee ( because they felt the need to help) not that you have todo the same (you do not have the space, Stephanie does) but we thank you for at least talking about it, not all vloggers do and that is why we and many others don’t watch them anymore.
Keep up your great content. Don’t worry about what the critics say because we love you guys. Discovered you during pandemic and you guys kept me going through that time.
Just wanted to say that what you said is spot on. I watch your videos on my lunch break in between taking care of patients. It’s really relaxing and it gets me excited to visit this summer!

Nicki and Carlos, just keep doing what you are doing, it's the perfect escape and downtime for me with a cuppa. We can all hold many spaces in our hearts, most is for our loved ones, the remainder is for people around the globe who are facing difficult times. We can accommodate both without the need for constant dialogue, as you say, just because you are not discussing it in your videos does not mean you are disinterested or lacking in awareness, understanding, sympathy or any other feeling. I now have to limit my attention on the news to once a day for the briefest of time, five minutes or less, because it was having such a detrimental effect on my mental health during the first ten days.
Again as you state, we have one life to live, none of us knows whether we have tomorrow, next week or next year. All we have is this present moment and we must endeavour to live in the present in the best way available to us, and that may be different for all of us. Commentary, discussion, tears, limiting our lives does literally nothing to help the poor souls in Ukraine or any others around the world in dire situations. We must honour the absolute miracle of our lives by living them fully and joyfully. And although the war makes me desperately sad and afraid if I dwell on it, I am living each day in gratitude for all that I have in the present moment, the simple stuff, love, family, a roof over my head, food in my belly and nature springing into life all around. xxx

I live in Australia and was very close to the floods and when we couldn’t leave our houses and just waited to see what was going to happen I watched channels like yours to escape from it all and relax. I love watching you way of life, your attitude to life and your lovely family and pets and household goings on are the break we all need so keep doing what you are doing and being the person you are.
