I was having some anxiety the last couple of days. All the covid reaching new peak levels daily. Afraid to leave my house because I’m in a hot spot and I’m high risk. 65, autoimmune, type A, chubby. This particular video at the top of a mountain, the hypnotic campfire and just watching Chad cook another cast iron meal was so relaxing and suddenly maybe everything is really okay and the world is ok again. There isn’t a more professional videographer on you tube and it’s perfect timing for me. Thanks Chad.

There’s a place for all tools. I saw my wood, then I split it with my hatchet or axe. I make kindling with my knife afterwards, like you do. Safety is paramount but when you get that down you’ll love that axe. Definitely keep it in the back burner until you are very confident. Also take the time to follow all precautions. Great to watch you learn all this. I came for the van life, and stayed for the outdoors 🤙🏼

Chad, I deeply respect your preparation and cooking, I also give way to to you and your kitchen as an observer. However, if I may be so bold as to offer an invitation to expand your cooking horizons. When you are preparing the shrooms, spring onions, garlic and ginger etc. just after the garlic is done add one of those “air plane” bottles of Chardonnay to de-glaze the pan, then continue with your routine for this dish. Also, the same holds true for the couscous except you’d add much less perhaps 1/4 of the bottle. I tread very lightly when offering any advise in the kitchen of another person, some do not accept advise and perceive it as criticism. That is why I am currently writing a book on “Elegant Cooking When Camping.” Thank You for yet another Wonderful Adventure!!
I couldn't agree more about the deglazing. I backpack quite often and use a small MSR stove on white gas and I still deglaze the pan. It really adds so much more flavor to your meal. As far as people not accepting advice, there will always be that one guy who asks for this steak well done. You can't help them all.
J. Clark I have been working in restaurants since I was 13, I’m now 59. During those years I have never understood the “well-done” steak order although my sister in law was one of “those” people. The only reason she ordered a steak that way was from learning from her dad. When I prepared her a ribeye at med. rare she fell in love with it. In my book I have an entire chapter (very small chapter) devoted to expanding a person’s experience by trying other temperatures of meat. In my research for the book I have been surprised that many people think deglazing and other cooking techniques are either too advanced or can only be properly executed in the kitchen. I have a real job ahead of me to try and break these myths...You’re absolutely right, we can’t help them all...

I was thinking the same thing. Plus I think his van is rear wheel drive! It is a fair distance above the ground and has amazing suspension. That helps.
