wagyu is just a breed, you get British wagyu, American and Australian, as well as the original wagyu from Kobe, the fancy stuff. that beef was 100% wagyu if its being marketed as such, but its not the good stuff.
@@davidkn - You're half right. Wagyu isn't just a breed, at least not in the sense that anyone can breed it and validly call it wagyu. The term refers to a specific breed that is also genetically traceable back to the original Japanese source breed, and is authenticated by the Japanese beef association. So British, American and Australian wagyu are all just as validly wagyu as the Japanese stuff. At least those that actually bothered to get certified are. But you are still correct that something being wagyu doesn't automatically mean it is the best stuff. There are still various meat gradings and levels of quality and stuff. But by definition wagyu is never going to be the worst stuff, because the breed specifications and certification requirements mean it is always going to be of a certain high quality. Again, I'm only talking about the places where the term wagyu is used legitimately.

Wagyu beef is delicious, but so overpriced. I've had Kobe beef in Japan a few times and is also about as good as it gets. But UK has some of the best beef anywhere in the world. Angus and Welsh Black beef are tough to beat - the key is how it is prepared. However, the VERY BEST beef I've ever had is Orkney Beef from Scotland. In my opinion, it has a flavor that is second to none - no matter where in the world you go.
you can't beat kobe Wagyu, but the good stuff doesn't really taste of meat, it melts in your mouth, which is ok as a side to a proper steak, but it needs to be in small doses
I agree. Sometimes something tastes so good because it is different or tender - or the way it is prepared. I've had Kobe with nothing but sticky rice and saki in tokyo and it was incredible - but as you pointed out, there wasn't much taste, only tenderness that you rarely experience. People don't often hear about how fantastic U.K. beef is, but I would put the Orkney against any of the Japanese beefs because it does have that taste of meat. Perhaps not as tender as Wagyu / Kobe, but more earthy flavor. Scotland beef (and lamb) is about the best tasting meat in the world, but it doesn't get the press that the Japanese meat does..@@davidkn
I@@user-gf1mv4zb4i It's Wagyu, but not Kobe. It's delicious, but I agree with the other poster that it's best enjoyed in small portions, not as a whole steak.

@@HolyFreakinDragonSlayer - How is he misinforming? Him saying it is still wagyu is totally correct. Wagyu doesn't have to be purebred (as far as I'm aware). So many wagyu experts in the comments lol. Farmers from all over the world buy pure bred cows and bulls from Japan and breed them, most notably Australia. These would be pure bred outside of Japan, the difference between Japanese wagyu and pure bred wagyu outside of Japan is the grading system of the meat and the process in rearing the cattle. For example Japan feed the cattle for up to 250 days longer before slaughter hence a higher fat ratio and their grading system more stringent. Some farms do cross breed and I would say they are the majority but not all. Only kobe beef can be called kobe if reared in Japan not wagyu.
