You forgot to mention the fourth influence of Peruvian food (and is an important one), African. African slaves brought to Peru during Spanish domination and their descendants have influenced Peruvian cuisine for 400 years.

Haven't seen any of your videos in a while but found this one by chance, I'm so glad I did! I'm half Peruvian and half Guatemalan and Peruvian cuisine is my favorite type of food ever. I wish it was more popular but it tends to be more expensive because many of the ingredients have to be imported. If you ever get the chance you should travel to Peru. Food there is really inexpensive (some would say cheap) and so much more rich in flavor because of it's authenticity. Not hating on Peruvian food here just highlighting how much better it would be in Peru. 🤗

P.s. you should try Causa, papa a la huancaina, papa con ocopa (we have a lot of potato dishes in peru lmao), rocoto relleno; personally, I dont like Aji de Gallina, but a lot of other peruvians do so I say give it a try lol. As for sweet stuff you could try Mazamorra, arroz con leche, and alfajores 😄

all of them lol the purple corn one is signature obviously, but I've tried most of them and they're pretty good.
