You forgot to mention the fourth influence of Peruvian food (and is an important one), African. African slaves brought to Peru during Spanish domination and their descendants have influenced Peruvian cuisine for 400 years.

Haven't seen any of your videos in a while but found this one by chance, I'm so glad I did! I'm half Peruvian and half Guatemalan and Peruvian cuisine is my favorite type of food ever. I wish it was more popular but it tends to be more expensive because many of the ingredients have to be imported. If you ever get the chance you should travel to Peru. Food there is really inexpensive (some would say cheap) and so much more rich in flavor because of it's authenticity. Not hating on Peruvian food here just highlighting how much better it would be in Peru. 🤗

Peruvian cusine has a lot of delicious dishes and one of the best and unknown dish to me is «guisado de pato».
It's duck seasoned with diferents peruvians chili peppers, cilantro, lemon, chicha de jora, onions, etc
It's really good, but you gonna find it only in peruvian restaurants specialized in north peruvian cusine.

yes Chaufa is chaofan. Lomo saltado is was basically created by chinese immigrants that did not have the same ingredients when they came to Peru so they started using local ingredients. In Peru peruvian restarants are called CHIFA , the word was derived from chinese ni chi fan. You guys need to visit Peru.

Peru is diverse because Peru has been influenced by Asia, African, Spanish culture.Furthermore, the most important thing that the Andean mountain range made it possible for Peru to have one of the most diverse climates in the world. You can go to the jungle, a desert, mountains with glaciers in Peru. That's why Peru also has varieties of fruits and vegetables, that makes Peruvian food diverse. Peru has more than 5 000 types of potatoes.

Great video. In Latin America there are two gastronomic powerhouses, Mexico and Peru. In recent years Peruvian food has become popular, not only in Latin America but throughout the world. Peruvian food is much more complex than what a restaurant in L.A. can offer. Traveling to Peru you will find that Peruvian cuisine can be subdivided in the following categories: 1) Cevicherias and seafood restaurants, 2) Chifas (Peruvian-Chinese restaurants), 3) Nikkei (Peruvian_Japanese food) and 4) regional cuisine like in Arequipa, the north coast and the jungle or rain forest.

Fun facts. Peru eats more rice than any other Latin American country. Lima has the biggest chinatown in Latin America and most Japanese descendants after Brasil.
