My favorite aspect of Cartman is that despite his evilness, he's a hedonist - more specifically just a kid who wants to have fun. There is no line he won't cross to get what he wants but at the end of the day, what he wants is usually something simple - a new toy, a visit to a fun place, a tasty snack, making his friends a bit jealous, etc
I love that the part that makes this character SO enjoyable and basically makes all his charm (and brings a bit of sympathy to his character sometimes) is that he’s literally a kid. If he was acting like this as an adult, I swear his charm would be gone, and dare I say making him a bit generic. Like all of the kids in this show, but it’s 10 times more essential to his character.

He makes fun of Kenny in poverty, Kyle being Jewish, Tolkien / Token being black, etc and people laugh out loud. Not out of bigotry but because the stereotypes really do make people laugh, even at ourselves. The fact he doesn't always get away with it is important in balancing him out and having people root for him or against him.

I think the best and funniest example of cartmans inconsistencies is that him bashing a guys head in with a branch and him trying the whack the other boys with a whiffle ball bat are literally one episode apart

I played Eric Cartman for a few years in an official TV advert for the Australian broadcaster - in between double episodes (around 2001-2003) there was an interstitial ad saying “don’t go away, another new episode coming right up” voicing over me with a red shirt, blue beanie, and eating Cheetos in a bowl of milk, as well as cutting out cartoon characters from a cereal box. Unscripted and improvised by me was the “tongue thinking” while using the scissors. I’m pretty sure I added non-verbal grunting sounds that sounded exactly like Cartman - the result of which I spent the next year walking down the main street feeling very like I was possessed by Cartman, making those noises again.

Oh my god my favorite Cartman moment is when he is meeting Kyle’s cousin Kyle is to get the $40 he has to not make fun of him. After Kyle asks Cartman about the price of his jacket and wondering if he got a good deal, the pause and “Oh man” he says is so funny to me. Like he knows it’s going to be a struggle to not make fun of him. And then later when they’re in class and Kyle is describing himself as all the stereotypes, Cartman is shaking and trying not to say anything. When he bursts about “Maybe we’ll have to send him to concentration camp! Ahhhhhhh!” and realizes how he lost his $40… that is hands down the funniest and best Cartman scene for me.
I think Cartman also brings out the human side of all of us. As in we aren't all good, or all bad, we are both. Cartman says the bad shit that we as adults think sometimes (albeit in a really exaggerated way), but because he's a kid, he can say it with little to no repercussions. He's basically the free spirit we wish we could be. Edit: I think Cartman is better written, even in his early development, than Joffrey Baratheon
I would agree with you that Cartman is important to the show. I personally agree with this because he is the main antagonist and I personally believe that he is true/truly antagonist material. Even more so than Garrison, TBH, obviously another antagonist of the series. He has true antagonist potential and even more so than most villains or most antagonists I've seen in fictional medias ever. His far lengths to get what he wants may be evil but really bring a "never give up" kind of vibe and gist to him, which is actually quite admirable. You could even say it makes him optimistic in a way. He's not as pessimistic about his loses or failures of his evil schemes than most antagonist villains in media, even more so than the ones who will try-try-again in other episodes or in movie sequels. (Or books, may be, shrug). He's a carefully planned-out antagonist and has much more villain potential than Archie Bunker, who I feel has more protagonist potential and not only because Archie actually is the protagonist of "All In The Family". Archibald Bunker still is more so lead-protagonist material than Eric Cartman will EVER be (even with a character with such "main character syndrome" like Cartman's, which, yes, I know is ironic because he IS a main character, and yes, I got this from the RUclipsr Ceric Artman, but still!). And I think that Parker's and Stone's ideal to make a character both an antagonist (and MAIN antagonist at that!) AND a protagonist (as in one of them), and even best, make him the tritagonist, was absolutely genius; and obviously more Trey than Stone, because he is obviously the brains and talent of the show more so than Matt; more Parker than Stone, I mean, and Parker is obviously the head honcho of the whole franchise, which you can obviously tell by the fact that his name is credited first in the credits of "credited by" as creators. Cartman is carefully fleshed out, well-planned, and all-around "Antagonist Material". ❤♥👏👍

Cartman is so loved and can get away with being a diabolical manipulative narcissistic Joffrey-like villian for one simple reason... He's freaking funny!
So, in terms of psychology, Cartman could be diagnosed with something called conduct disorder. Kids cannot be diagnosed with cluster B personalities disorders like ASPD, NPD, BPD, etc. If Cartman was an adult then he would definitely fit as ASPD, even if he doesn't have complete absence of empathy (therefore why he is able to turn into a somewhat decent person in the Post Covid movies, or why he feels empathy for the stray cats), the fact that it is selective and minimal is enough to characterize as a symptom. Kids, though, don't have the prefrontal cortex fully developed, and those disorders can only be applied when you are already supposed to have it done. What could be attributed to him is conduct disorder, or another disorder that's called oppositional defiant disorder (ODD), that are seen in kids and later can develop to a full personality disorder. ODD is defined by recurring rageful and spiteful responses, constant payback and revenges, arguing with other kids and specially with authoritative figures. Conduct disorder also involves antisocial behavior, constantly breaking rules, violating social norms, lying, stealing, abusing substances, skipping/neglecting school. And he's the self-deceitful type, so you can never know for sure what's going on inside his mind. Now, kids with these can be bullied and be bullies, usually both. They can also be treated. I think what is most funny about Cartman's character is that he is redeemable, he just doesn't deserve it.
While Eric is a brilliant character, I refuse to agree he is the best written one- since writing an outrageous vain character who always wants to be in the center of attention is actually a lot easier than writing a more reserved, morally righteous and intelligent, but anger-prone multi-dimensional self-learning character with a savior-complex, which is why I'd argue Kyle is the best written character of the show.
One of the first episodes I saw, with my dad, was Cartman feeding chili to Scott Tenorman. I didn't think much about it except maybe this is why actual 8yos shouldn't watch it. The next one I saw was Cartmanland with Kyle renouncing his Faith. Honestly, those didn't have a huge impact on me. My favorite Cartman moment? In The List when Cartman literally goes out of his way to gloat about how the girls thought he was better looking than Kyle. He knocks on the window and moves with the curtain as Kyle covers the window. It is hilarious to me how he moves with the scenery to make a point he's made several times out of pride. That was one I watched on my own when I started getting into it.
