Beautiful video. Your mother would be very proud of you and honored that you recreated her recipe. Bok choy is probably my favorite vegetable. I live near a large Chinese supermarket and they always have four or five different varieties of bok choy. I could eat it every day.
Vincypearl, the cornstarch + meat massage is called "velveting." Along with the brief resting period, it tenderises the meat. [Once in a while a Chinese cook will use baking soda the same way.]

If you don’t eat meat can you substitute vegetables?
I would suggest omitting the meat and using veggies alone.
I’d add some fresh egg noodles to it.
