There was an easy answer as to why Ben couldn't turn into an Anodite right there any nobody took it. Gwen is an Anodite. Gwen is Ben's cousin. They share the same grandparents. The omnitrix already has a rule that it can't turn someone into something too close to their own species. Why not just say that Ben is too close to being an Anodite for an Anodite transformation to be possible for him? He's already got a future where he learns some of Gwen's magic, so it's the best answer we could have gotten.
Ben could absolutely become a digimon, they canonically operate off of a form of digital DNA, and to begin with, what is DNA if not a glorified programming language?

Personally, I think droids would be compatible transformations. Largely because they are capable of emotion, have the ability to feel pain, and tend to grow into their own beings when either allowed to keep their memories, or are faced with a problem that forces them to pick and choose what parts of its programming to keep and what parts to ignore.

In that case Eternity is stronger than the Living Tribunal, so it's possible for ben to become the Living Tribunal if you bend the rules slightly.

I would remove any notion that Ben can transform into anything human-related (meta-humans, speedsters, etc.) since they are too close to human DNA that a transformation wouldn't be viable. Nanomech is to only exception to this rule since the Omnitrix literally created it thus I believe that the human DNA contribution is minimal enough and only used to fill in the needed gaps in stitching together the nanochip's DNA into a cohesive being.
I mean, if ben can have two separate upchuck transformations due to variance in appearance, it does kind of make sense for him to be able to turn into things like meta humans. Especially if we're talking about things like quirk users or mutants, since sometimes, they can have wildly different physical forms from normal humans.

One of the transformations in the omnitrix is a dolphin. This is canon. The only two rules are: 1. Does it have DNA? 2. Can it's brain support the intelligence of the omnitrix user? IE is it sentient and intelligent. 99% of pokemon qualify.

Because a uchiha naturally has the sharigan there is a mutation that allows them have it where as ben does not have that mutation
