Essay tests 'should' include what they want in order of what and how they want; however, he tells you what almost "every" essay instruction includes (e.g., contrast means to contrast not spew out all information you know). Also, on essays, if you underline key points that helps guide a professor (or use numbering system to highlight or emphasize). And, always write something! Anything related to the topic. You may not earn points, but at least the professor feels you have something to say.

I like his lectures/workshops but I feel they're not as appropriate for someone studying for a STEM degree where a lot of the things you learn are technical skills, doing math etc

Have you ever tried system called Xocialign System? I have heard several awesome things about it and my mate completely eliminated his social anxiety problem naturally with this program.
