You need to tell people that they have to boil the salt fish a couple of times (change to fresh water every time)to get the some of the salt out of the fish. You can tell when the ackee is done by the tenderness of the ackee.
@@jayanm.k6366 You don't use mackerel for this nor any other oily fish. You use Cod or Pollock but cod is the main fish to use. Pollock is the poor Man's choice. The salt is to preserve the fish. So, if You don't use salt fish, (fish preserved in salt), then You You use good, fresh fish. Good fresh cod. You never use tinned fish for this dish & certainly don't use oily fish like mackerel. You can also make it with just the ackee & add red & yellow peppers & fresh tomato. You wanna to cook up the seasoning (scallion & veg) & when it's nearly done, ads in the ackee for the last 2 minutes. 2 minutes will do as You don't wanna overcook the ackee

Great instructional on the processing of using fresh ackees, thank you!! ive often imagined how wonderful fresh ackees must taste. but canned has been my only experience. 1 experience with canned ackees that weren't drained, rinsed and parboiled than drained again and i was rushed to hospital for stomach pump. im not Jamaican by birth or culture but my Gullah/Geechee culture in the usa is similar enough to know that our Ancestors had created processes to detoxify foodstuffs to keep us safe and we should pay close attention to those processes more now than ever. During my convalescence i found that ackees aren't exclusively grown in Jamaica and are being harvested, forced rippened and canned with preservatives. hypoglycin is the poison in unrippened ackees and it causes liver degeneration in people. Here in the states more people are falling in love with ackees as i already have and its brought down the pricing to I believe so even more people can enjoy and include it to a plant based diet. TRUST THE PROCESS AND YUMMY IN MY TUMMY!!!
when I make ackee from the can, I don't boil it first,... i just strain the liquid out, and add it to the other ingredients in the pot,.. and let everything cook down a little bit. The ackee is already pretty soft, coming out of the can. (i imagine that it is pre-boiled from the factory processing.) Same way,.. when I cook fresh-frozen ackee that my family brings me from Jamaica,... I don't boil it, after I thaw it out,... because it's already been pre-boiled. And yes,... you can freeze fresh ackee and cook it later. Nice video.

LOVE, love, love ackee and saltfish. My dad is/was Jamaican and prepared it every Sunday....yummy! I never learned how to prepare it but living in Queens NYC, there are about 5 (close by) Jamaican restaurants. This is a prepared (home cooked) dish they serve/sell every Sunday to eat in or take out. Usually, it is sold with boiled green bananas, boiled dumplings and white yam. Occasionally the option of breadfruit is used. I also notice that they prepare it with chopped tomatoes. Anyway....DELISH!!!

Miqua B.....My dad used to tell me that "everyone cooks differently and no two dishes come out the same even when prepared to the letter by two different people". I have a very close Jamaican female friend and we "discussed" the other day about how the saltfish should be 'chunked" (so to speak) and not shredded and if it were chunked (according to her) it was the wrong way to prepare it. I told her she hasn't the right to label it the wrong way just because she doesn't do it that way.....oh well, just living in a world with different opinions about different things. :)
Just to add to the conversation. Sometimes the salt fish is not "plentiful" so in order to make it go further, some folks will shred it. If you have a good amount of salt fish then "chunk" it of course (lol). That's how I do it........
Another way if u want to know if there ackee has finish boiled is to use a fork and poke the back of the ackee, that's the toughest part, once u poke it and back of the ackee break easyily enough, its finish being boiled.

I know you asked this along time ago but yes you can use the ackee from a tin. It's either in brine of in salt water. I use the ackee in brine because saltfish is already salty even after the boil so I figure not need for my ackee to have even more salt.

If you have not yet gotten the information, I would suggest that you let it thaw before cooking or it may get too mushy, especially if it is the softer "butter" ackee

It has a very different taste, it has the consistency of a a starchy scrambled egg but without any egg flavor. It almost has a slight nutty taste, slight. You will have to try it for yourself.

Just make sure nothing is between the ackee fruit before cooking.... The waste is just a little orange red think that grows within the ackee fruit, maybe use for POLLINATION. So it's probably called a pollen. I saw green Jamaican pirates eating ackee fruits on the tree on our Island in the Caribbean, occasionally. So I guess it's for them..

When I buy salt-fish here in England, it says on the packet to soak the fish for about 4 hours before boiling. Is this different salt-fish? Not seen fresh ackee here but the can is right below the salt-fish in the store :) I never thought to look for coconut oil but this should taste better than sunflower oil. One more question. It depends, u can eat it for breakfast with roast bread fruit or bread or fried dumplings or u can eat it for dinner with rice or ground food/provision. You can improvise and ear ackee with srips of already cook jerked chicken breast or with bacon bits or ham. I love ackee and saltfish and at christmas time ackee and ham.
Am from Jamaica and I live abroad so I make the Acker in the can only grace one I have use n have boil my Acker over with two green pepper skellion, premento, seed salt but I don't put water in mine never see that before but I guest everyone cook different how they learned too
You type like you're African. Jamaicans usually know how to use "I'm" and "am". I see so many Africans who mix those two up. You also spelled all of the Jamaican cooking ingredients wrong. No Jamaican would misspell those type of words.
Ackee fruit is not sweet, it more like butter with a unique flavor; it is good with roasted breadfruit, bread, boiled hard starchy foods or rice. Ackee is prepared many ways.
Would you please explain the pimento? (I think it is American allspice but I cannot remember) My friend and neighbor made this dish all of the time. She served it w/ pigeon peas and rice dish that was to die for. She would laugh because all of the way across the street, I KNEW when she was making it and I would shamelessly beg for a plate.

I like to add a little water cover the pot for about 5 minutes, why I want the ackee to pick up the flavor of the seasonings and the uncut pepper to soak . I love the flavor of the pepper the scotch bonnet but not the heat. The extra dry ingredients is not necessary.

I find when I take off the skin before boiling, it is less salty. I would change the water during boiling.

It depends, u can eat it for breakfast with roast bread fruit or bread or fried dumplings or u can eat it for dinner with rice or ground food/provision. You can improvise and ear ackee with srips of already cook jerked chicken breast or with bacon bits or ham. I love ackee and saltfish and at christmas time ackee and ham.

Am from Jamaica and I live abroad so I make the Acker in the can only grace one I have use n have boil my Acker over with two green pepper skellion, premento, seed salt but I don't put water in mine never see that before but I guest everyone cook different how they learned too

Ackee fruit is not sweet, it more like butter with a unique flavor; it is good with roasted breadfruit, bread, boiled hard starchy foods or rice. Ackee is prepared many ways.

Would you please explain the pimento? (I think it is American allspice but I cannot remember) My friend and neighbor made this dish all of the time. She served it w/ pigeon peas and rice dish that was to die for. She would laugh because all of the way across the street, I KNEW when she was making it and I would shamelessly beg for a plate.

One thing you haven't tried take dried small shrimp with the vegetables and get it dark with all flour lemon juice it brings the ackee out tried it with swordfish

I don't know where you get that recipe from. No black pepper!? And why did you add water to it and all the extra stuff?
I like to add a little water cover the pot for about 5 minutes, why I want the ackee to pick up the flavor of the seasonings and the uncut pepper to soak . I love the flavor of the pepper the scotch bonnet but not the heat. The extra dry ingredients is not necessary.

Yes cook it!, I do not belief the ackee fruits were cooked before canning by the industries. Therefore you need to cook it until tenderized.

+Janet Garvin Ms. Janet - no disrespect to this man - but you do not need to cook canned ackee. It is fully cooked in the can. Rinse and add at the end and just warm through. This is all we use as we are not blessed to have fresh ackee

It is a fruit, but it is poisonous if unopened. It has to open natural to release the poinous gas.
