I was a vegetarian for 28 years, and the vegan for around 9 years. I found that high carbs really started to increase my insulin levels with some quite big spikes. When I dropped the carbs to a much lower level (bearing in mind that I am a slim build) I noticed a drop in inflammatory markers, and a massive improvement with my hearts afib problem. I noticed a difference when eating eggs, and bacon. I tried going back to my usual higher carb plant based-diet a few times, but I slowly get an increase in inflammation and my heart just does not seem to like it. I noticed that combining this with intermittent fasting made a massive difference in my overall health.

Plants are actually very inflamitory. Look into oxalates.
