It does nothing for dynamics; what It does is it simulates the resistance of the keys on an acoustic piano, which has an actual physical mechanism, which in turn makes the key harder to press down. There's a reason why drummers that want to play fast choose pedals like Axis pedals, that have smoother action.
I can tell you that it wouldn’t sound good at all ahah. He’s got his kick on the C and his closed hat on the F# (at least from what I can tell). That interval is known as a tritone which is one of the most dissonant intervals in western music. There are many more places where he plays stuff that would sound awful, for example minor 2nds and I think I saw some more tritones (E and Bb)

and he doesn’t have to move his limbs across a drumset. this definitely would not be possible for someone to do on an actual drumset. regardless, this is very cool and he is a very skilled piano-drummist.
