    I'm not much of a chili head, but I had a very prolific jalapeno plant last year, and needed to do something with all my peppers, so I decided to look up hot sauce recipes, and after watching several, I decided to try yours.
    And we were very happy with it!
    I had no serano peppers, and when I was finished I passed it through a mesh (I like thinner, less pulpy sauces) but aside from that I went strictly by your recipe, and the results were fantastic. I had a few 3 ounce jars that I filled and gave out to a few people, who went through it very quickly, and sent about half to my brother who loves spicy stuff (even though he doesn't care for jalapenos much) only for him to ask for more!
    His 5 year old daughter loves it mixed in with her ketchup for chicken nuggets lol (works very well, too. it is such a bright sauce that it really gives life to boring ketchup!)
    We've used it for all sorts of things, and I was iffy about it at first (my only real comparison was standard Frank's cayenne pepper hotsauce), but it grew on me quickly.
    I plan to have more than 1 jalapeno plant next year, largely so I can make several batches of this!
    So, TL;DR version?

      That's awesome!!! Peppers you grow yourself make the best sauce. Ive got a few in the v fridge right now and a new one very actively fermenting in the basement. This one is my go to for tacos! Cheers Nonya!

      @@WhiteThunderBBQ Thank you. I'm excited for next year's garden. I've always enjoyed peppers, but I only use a handful, and give most away. Next year, I plan to experiment with hot sauces, salsas, and more. My success with replicating this recipe really has me excited for making more.

    Made this sauce earlier today. It’s great. I charred the chillis a bit more and added more vinegar and it made a nice fruity smoky sauce with a kick. You’re right about the heat though. 3-4 for a chilli head.

    I've tried this recipe a few times and it's great. Thank you. One thing I've discovered that makes it even better is if you flip the skewers just one extra time.

      I never tell anyone its shelf stable....you would have to measure the pH for that. Its probably shelf stable but to be safe refrigerate. Thanks Ralph!!! Good luck!

    Just made this jalap sauce myself, only forgot the garlic but OMG.. Why is no company selling this kind of sauce? Thanks for the video, for me buying a hot sauce in the supermarket is outdated right now! 😍 P.s. I added a couple of spring onions

      100% - store bought sauces are obsolete with what you can make at home. Lime would be another good addition. I love spring onions in pretty much anything! Cheers Bart!

    I tried this. I'm amazed that the sweetness of the honey is so evident. I actually spread a little on some prime rib. I did neglect that final boil. Was that just precautionary?

      oooo - only beef I tried this on was Tacos. That final boil is to get the sauce to a temp and hold it there before bottling for longer storage. If you use it up fairly quickly though - I wouldnt worry about it going bad in the fridge. I am glad you liked it!

      Im guessing it can be water bathed canned.... but I'm not sure. I am no expert at canning. I would measure the pH to know for sure how long it can be kept.

      Thanks!!! I have been making tons of dried chili flakes on my grill - kind of a chili head. So far I did some red habaneros, hot Portuguese, fatalii and paper lantern habaneros.       @@burresscounty make sure you get some good equipment for fermenting. Air locks and glass jars. I have a few videos on how I do those as well.

      @@WhiteThunderBBQ the sauce is damn good brother. I did the simmering on my charcoal grill as well. Great flavor and a little heat on the back.
      I brew beer all the time, so fermenting pickles should be pretty easy. I'll definitely check your videos out. Thanks for the recipes!

    I've been trying to find if anybody adds wood to their charcoal because I did it by accident and it is now my favorite then just regular charcoal. They are both bomb but I like the smoke flavor

    Looks tasty. Video didn't say how much kosher salt, black pepper, or honey to use. Is there a recommended amount?

      really depends on the amount of peppers used. Start with 1tsp Salt, 1/2 tsp pepper and a tablespoon or 2 of honey. Cheers!

      @@WhiteThunderBBQ It turned out well! SUPER hot! I would say 9 outta 10! Makes the eyes water! I didn't char on the bbq, I used my oven to get "grill" marks. Worked out fine.

      Check the PH to make sure its lower then 4.6 to see if its shelf stable.....I would just keep it in the fridge. Cheers Alex.

    Might be a stupid question but... 1C of vinegar and 2 C water is that Cups or what kind of mesurement is it? Also what kind of vinegar do you use? :)

      Yep - cups. I like white vinegar in my hot sauces but you could use apple cider if you want.

      I am not 100% sure, they were seeds from Supermarket (medium heat) unnamed chillies I bought last year!! They are growing great for sure though.

    Great recipe. If you like alot of heat, I would add some habaneros maybe 2 or 3 and no honey less water and vinegar.

    Just came across this looks good. Does adding the vinegar at the end keep the smell down? Some I've tried before calls for the peppers to be cooked in the vinegar then blended.

      Vinegar is mainly to lower the pH to make it keep longer. And add some flavor.
