This dish was served by a restaurant in Rome, NY. It was there for decades and I grew up with it. Very filling and rich. Veal Siciliano. What an incredible dish. The restaurant was called Bucky's. Owned by 2 Italian brothers. It closed sometime in the last 9 or 10 years. A shame. A sort of a hybrid between eggplant parm and veal parm.
"We're not from Sicily, our family's from Naples, but we can cook just as good" . Love it! I guess that means I'm blessed, one side's from Sicily and the other's from Avellino! (next to Naples) What happened to your line, "How is it, Ma?" We all want to know what she thinks!

It's after midnight and I'm about to raid my fridge for something to eat, thanks guys 🙄, I'm with your mom, I could eat those eggplants right out of the Fryer too 😋, here's an easy tip to pick perfect eggplant 🍆 everytime, look at the bottom of them and go with the ones that have the stems that are CIRCLE those are the male eggplants and contain less seeds and are less bitter 😉 the 🍆 with the elongated stems are the females and have more seeds and are bitter. And for my final thought of the day, there's a deli in Brooklyn called John's Deli, they also have a location in Staten Island too, their pretty popular, they too make something similar to this but instead of veal they use chicken cutlet and put everything you just did on an italian bread. But, I have to say, your veal was beautiful. Oh, and 1 more thing, your kitchen looks BEAUTIFUL!!! I love love love all the accent pieces that were added, and how you added onto the counter to extend over the pony wall, great job! HAPPY NEW YEAR!

ie Progresso, 4c Italian. Or make your own.
