Wow they look so nice Matthew. Well done. I made it yesterday if I knew you have the recipe of Alloo roti I also would certainly follow your steps. But I made it from the Dhal puri roti recipe and it came out good and soft but during rolling the roti some was torn. But I am satisfied with the end results. Oh and I didn't know that I must put thym in the potato filling. Good to know that next time. God bless you and thanks for sharing.
Matthew!!! I’m Jamaican and this is my mother’s roti that I always wanted to know how to make!!! Only difference is she only used the green escallion in the potatoes. OMG! You make it look really easy. The only problem I have is that you don’t provide water measurements and that flour to water ratio is critical for people like me who aren’t used to making dough.

Matthew thanks so much for all your recipes! I've tried your paratha and dhal puri recipes quite a few times but struggle to get them to puff up while cooking. Any advice where I might be going wrong? thanks again for the great content you are providing please keep it up!
Maybe try not rolling them too thin until you get the practice. Also make sure to use enough dry flour and don't be too heavy handed with the rolling pin.

You have to gauge the water because sometimes more or less water is needed. I did use scallions too.

Use my recipe using all purpose flour. I dont ise self rising because I dont know how much baking powder is in it
